Catching Up...

Hey all! Been missing in action the past week and a half because my camera cord broke so I couldn't upload anything. I finally got a new cable so I'm able to show you what I've been eating. Sorry about the bad lighting!


Soba noodles with ginger peanut dressing. Served with sauteed spinach. Recipe here.


Thai red curry with tofu, sweet potato and eggplant on top of somen noodles.


Dinner in bed. Egyptian lentil soup, salad and Fabe's chocolate cake. The cake was good but veeeery health foody tasting.


Falafel night! Baked not fried.


Falafel sandwich with cucumber garlic sauce (cucumbers, cilantro, garlic, vegan mayo, lemon juice)

Hey Kim! So happy you're back in action, you've been missed so much!

Oh, all your meals look fantastic, I didn't notice any bad lighting, all the photos look absolutely beautiful. That soba noodle is really my kind of food, I'll make that for lunch tomorrow, YUM!

I always use the falafel recipe from VWAV because it's so easy. :)

I made falafel the other night too! I found a recipe to do it in the crock pot (I am all about the crock pot.) It was pretty tasty, but after eating it I realized I had never had falafel before so I don't know how authetntic it was. Was good though! The hubby liked it.

The falafel looks delicious - like the baking idea, less messy and no doubt healthier. Great looking falafel sauce too, and I always like Thai red curry. Yum!
