BBQ Chicken PIzza
Being a native Californian, I used to love BBQ chicken pizzas in my pre-vegan days. Specifically the one made famous by California Pizza Kitchen. Don't know why I waited so long to try this but it was simple. Trader Joe's pizza dough brushed with a light coat of olive oil and bbq sauce, then Trader Joe's vegan mozzarella, Gardein chicken strips that were sauteed in bbq sauce, red onion, a little drizzle of bbq sauce and some crushed pepper flake. Into the oven to cook and then sprinkled with fresh chopped cilantro when it came out. Was great!

A few foods I ate recently...

Gardein mandarin chicken with asian coleslaw, rice and broccoli.

Another junk food cake made with Duncan Hines white cake mix, coconut cream flavored jello pudding mix and cashew milk. Served with Coco Whip.

Pizza made with Trader Joe's dough and vegan mozzarella cheese plus some cheddar Follow Your Heart sprinkled in there. Was delicious!

Walnut "Chicken" Salad

Sandwich adapted from the tempeh-walnut "chicken" salad from 1,000 Vegan Recipes. I changed it up a bit depending on what ingredients I had today. Instead of tempeh, I used chicken-less strips (like Trader Joe's brand or Gardein) and chopped them up into bits before adding things like Vegenaise, celery, walnuts, dijon, lemon juice etc. I left out the red bell pepper because I didn't have any and used extra celery instead. It was very tasty on soft white bread. I think I may make this for my next tea party.
