Weekend eating.

Another visit to El Arco Iris in Highland Park.

Potato tacos, no cheese.

Donut Friend!!! Top two are Custard Front Drive. Bottom left Panda Berry and bottom right Nutellavision (this one was not vegan for my husband).

C&O Cucina: penne arrabiatta. Yum.

Homemade dessert: whole wheat pancakes layered with berry compote and coco whip. My sweet tooth is outa control! I am 19 weeks pregnant (surprise!) so I must watch my sugar intake!!!

Buckwheat pancakes & Tomato Cashew Potato Stew.

Got this recipe from The Happy Pear over at facebook. Mini buckwheat pancakes with bananas, maple syrup and cinnamon. Pretty tasty.

A deliciously creamy stew with cashews, tomatoes, yellow potatoes, sweet potatoes, green beans, leeks, mushrooms, carrots and parsnips! To make it creamy, I blended the cashews with a little water and also blended some of the soup. Recipe below. I made it up and never measure anything so you might have to fiddle a little bit with it!

Tomato Cashew Potato Stew
2 TB olive oil
1 leek, sliced
½ large onion chopped
2 cloves garlic, minced
herbs: thyme, oregano, basil (about 2 tsps fresh)
1 parsnip, sliced into bite size chunks
1 carrot, sliced
1 large sweet potato, cut into bite size chunks, about 2 cups
2 or 3 yellow potatoes skin on, cut into bite size chunks, 2 cups
1 portobello mushroom, chopped
1 cup green beans, cut into pieces
1 can stewed tomatoes
2 cups veggie broth
1 cup cashews that have been soaked in hot water for a half hour
1 TB soy sauce
pinch of cumin
salt and pepper to taste
pinch of cayenne

Heat olive oil in a soup pot over medium high heat. Saute leeks, onions for a few minutes. Add garlic and herbs. Continue to cook a few minutes more. Add parsnip and carrots and cook until everything gets a little tender. Add sweet potatoes, yellow potatoes, portobello, green beans, stewed tomatoes with juice and veggie broth. It should all cover the potatoes. Bring to a boil and then lower heat to simmer for 15-20 minutes until potatoes are tender. Meanwhile, drain cashews and blend with about 1/2 water in a blender. It will blend easily and look like milk. If too thick, add a little more water. Add this to the stew. Stir and simmer for about 5 more minutes. Season with soy sauce, salt, pepper, cumin and cayenne. You may leave the soup as is or you can ladle some of the potatoes and liquid portion of the soup into a blender, blend til smooth and pour back into pot. Simmer for another 5-10 minutes, stirring occasionally so the potatoes don't stick to the bottom of the pot.

A vegan Bisquick pancake.

I bought a box of Bisquick the other day in order to try out some recipes from a 1964 Bisquick cookbook that I have. I haven't yet tried any of those retro recipes but yesterday came across a recipe for vegan pancakes using Bisquick at Modern Martha blog. Link to recipe here. Yes, I know that Bisquick is not healthy and contains hydrogenated oil of some kind but I had to try this out! I normally use the Vegan Brunch recipe which is much healthier (and delicious) and uses "from scratch" ingredients. The Bisquick one was very rich and very fluffy. It was really good with some Earth Balance margarine and a drizzle of Lyle's Golden Syrup. I also made Lightlife sausages pictured in back.

After Thanksgiving Foods.

This morning I was in the mood for a fluffy stack of pancakes so I went with my go-to recipe from Vegan With A Vengeance (also in the Vegan Brunch book). The recipe makes PERFECT pancakes. No eggs or dairy necessary!

When I was little, I used to make scrambled eggs with slices of processed Kraft singles on top which would melt and make the eggs very cheesy. I recreated that today with scrambled tofu and Daiya vegan cheddar. I sort of mixed in small slices of Daiya into the tofu while it cooked in the pan. It got all melty and gooey.

Yesterday's lunch was a very simple congee (rice porridge) made with carrots, celery and leftover Tofurky bits. Sriracha is a must when eating congee.

Fast donuts made out of Pillsbury crescent roll dough. Deep fried and dunked in cinnamon-sugar!

Buckwheat Pancakes

This morning I made the buckwheat pancakes from the Vegan Brunch cookbook. They were easy to prepare and are gluten free. I used a combination of buckwheat flour and corn flour. These were really good with Earth Balance margarine, maple syrup and a blob of apple butter. Yummy.

Spelt Pancakes

This is what I had for dinner! I was craving pancakes like crazy so I had to give in and make them. I took the recipe from "You Won't Believe It's Vegan!" and substituted spelt flour for the all purpose flour and rice milk for the soy milk. Perfect pancakes if you ask me.

Pancake Breakfast & Iraqi Eggplant Casserole

This morning we had pancakes (Vegan w/ a Vengeance recipe) and veggie sausages. The sausages are Lightlife's Gimme Lean ground veggie sausage which I shaped into little links. They were perfect with the fluffy pancakes and maple syrup!

Not the most photogenic dish... This is the eggplant casserole recipe from my Iraqi cookbook "Delights from the Garden of Eden". It has eggplant, onions, peppers, garlic and chickpeas in a savory tomato sauce. The recipe called for too much liquid I think so it was still a little watery at the end but I didn't mind that much. Next time I make this I'll decrease the liquid a bit.

Casserole served on top of couscous with a garlicky yogurt sauce, pita and arugula and cucumber salad. So delicious!

Pancake Puffs!

Decided to use the "Pancake Puffs" pan I got for x-mas. I say, you need patience for this! It's the flipping part that you have to learn how to perfect. They come with these sticks that you use to flip them and if you don't do it deftly enough, the batter spills over and what you get is a perfect round puff on one side and an imperfect bumpy puff on the other side. I think I'll try to perfect my flipping technique before I start making chocolatey or creamy fillings. I do not know of a vegan Ebleskiver recipe so I used the pancake batter recipe from Vegan with a Vengeance and kept it simple with a little powdered sugar and maple syrup. They were delicious and fun to eat.

I photographed them pretty puffy side up.

Drowned in maple syrup.

Edit: This pan also doubles as a "Kanom Krok" pan which I loved to eat when I visited Thailand.

Mmm, dinner.

I love eating breakfast for dinner. I don't do it often because it just seems too indulgent and unhealthy. I couldn't resist it tonight so I went all out and made Lightlife's Gimme Lean "sausage" patties as well. They are pretty good, quite sausage like but then I don't know, I haven't eaten sausage in almost 2 years. It's nice to know they are FAT FREE and cholesterol free too. Wow. (Actually you fry them in olive oil so the fat comes right back.) The pancake recipe is from 'Vegan with a Vengeance'. I really love these pancakes. They are soft, fluffy, tender and perfect smothered in margarine and drowned in maple syrup.
