Healthy Chocolate!

No not really healthy but I guess healthier than your average cupcake? These are the delicious chocolate zucchini cupcakes from Chocolate Covered Katie with chocolate ganache (Not healthy!) on top.



 So he’s getting a serving of zucchini?



Pita sandwich

Leftover broiled veggies made an awesome pita sandwich with hummus and the green tahini sauce from Simply Nigella cookbook.

Broiled veggies, burgers and potato salad.

These were marinated in olive oil, lemon juice, garlic, salt and pepper. Also added fresh chopped parsley.

I also stuck the Boca burger under the broiler. Tip: brush the frozen patty on both sides with a little bbq sauce for flavor!


H enjoyed his burger. I had cut it into a big star shape with a cookie cutter. A little mayo and ketchup and he was happy! Side dish: “Dino apple sauce” applesauce plus spinach shhhhhh!!!!!!

Fix It And Forget It Crockpot Curried Lentil Soup

Am I the only one that likes these kinds of cookbooks with hundreds of simple, unglamorous recipes crammed into one book and only require a bunch of stuff you already have in your pantry? Got this at B&N for a bargain. 

Last night H and I loaded up the crockpot to make the Curried Lentil Soup. Came out great! I did need to add a bit more salt and a touch of soy sauce at the end.

Kid friendly nuggets.




These were so easy to make. H helped me make them by dredging firm tofu slabs in seasoned flour, then soymilk, then crushed cornflakes. Then we baked them in a 420 degree oven for about 15-20 minutes, flipping halfway. He was so excited to eat them, especially with 3 different dipping sauces: bbq, ketchup and ranch.

The Farmer’s Market at 3rd and Fairfax.





The other day we went to The Farmer’s Market and The Grove for some shopping and lunch. I hadn’t been there in ages and it was the baby’s first time. He loved it.

I got a delicious falafel wrap at Moishe’s, one of the food stalls. It was $8.95. The falafel were flavorful and tender and bathed in yummy tahini sauce.

H had French fries and a sandwich we brought from home.

Chickpea and Vegetable Curry from 1,000 Vegan Recipes

This book is great because whatever vegetables and pantry items you have on hand, you will most likely find a recipe that will work. I wanted a mild curry and found this in the book. Only thing is the recipe has no tomatoes and tomato paste but I added them not realizing this! I’m so used to curries having tomatoes. Anyway, this was creamy and delicious because of the coconut milk. 

Be prepared to add Sriracha sauce for heat. Like I said this is mild. I hope the baby will eat some.

Mother’s Day breakfast and Banana-Fruit Cocktail muffins.



Us on Mother’s Day. 

These were delicious. I used the banana walnut muffins recipe from 1000 Vegan Recipes but only had one banana so to replace the other banana, I puréed two mixed fruit cocktail cups. I omitted the nuts. Worked perfectly!



My husband made us vegan pancakes for breakfast with Yves sausage and diner home fries! Yummy!

Snacks.


 In Vegas for a family get together. We’re attending a service tomorrow for my dear cousin who sadly passed last week after fighting cancer for about six months. We are hanging in there, trying to go on with life. I’m constantly busy with my toddler but when I get a chance to think, I think about how much I miss her and I get very sad.

So I’m staying at my aunt and uncle’s house and my hubby and I ran out to get groceries. I came back and made these two dishes for everyone.

Bean dip: refried beans, avocado, black olives, vegan mayo mixed with lime juice, fresh pico de Gallo, scallions. Get the tortilla chips!

Chopped salad using two different bags of mixed greens that include kale, cabbage and other stuff. I tossed out the included dressing and used Annie’s Tuscan Italian dressing. I also put in the included cranberries, sunflower seeds and pumpkin seeds. Delish.

I added some chopped Opal apple to my serving.
