More weekend foods.

Weekend is here.


Arugula pesto that I whipped up with 1/2 a bag of arugula, walnuts, garlic, olive oil and a touch of lemon and salt.


Quick pan grilled portobellos and veggies.


Vegenaise and pesto on both sides of the delicious French bread.


Stackin it up.


Amazing. The lettuce was a fresh compliment to the juicy Portobello, flavorful veggies and oily pesto.


Yum.


Snack time: homemade hummus and pita.



Dashed over to the local Indian market for some imported yummies for the weekend!

Homemade onigiri. My first time!

Inari. Very easy to do. Just stuff tofu pouches with sushi rice!

Vegetable gyoza. Got these in the freezer section at Mitsua Market.

Vegetable and pumpkin croquettes from the refrigerated section Mitsua Market.

So yummy!

Oven roasted sweet potato, red onion, zucchini, carrots, mushrooms and tomatoes. Served with arugula salad and whole wheat tomato couscous.

Raspberry Tart.

Mmmm. Raspberry tart. I followed the Strawberry Kiwi Creme tart recipe from Vegan Pie in the Sky but used puff pastry as a base and used all raspberries. The filling is a cashew cream that tastes so good!

Burrito bar.

I was craving Chipotle style burritos so I whipped up all the components: rice, chipotle flavored beans, grilled peppers and onions, guacamole, corn salsa, pico de gallo... Worked out great!

Some foods I ate...


Thai Sukiyaki noodle soup. So good! My mom made this for me.

This is me when I crave sweets on a weekday. Take a box of chocolate fudge cake mix, add to it 2 mashed bananas, 1 1/4 cup of cashew milk and stir. Bake for about 35 minutes until done. Then for frosting, get a 1/2 cup of peanut butter and stir over low heat with 3 TB cocoa powder, maple syrup and agave to taste and some vanilla too.




Stir fry tofu and broccoli with chinese garlic sauce.
