Quick tagine.

So this is basically a stew with Moroccan flavors. It’s not cooked in a traditional tagine so I’m not sure why they called the recipe that... Anyway I wanted a quick tasty stew and I got that! Recipe here: Quick tagine

Broiled mushrooms and tomatoes

H helped me wash the grape tomatoes.

Before broiling I brushed them with a mixture of: olive oil, balsamic vinegar, soy sauce, and fresh minced garlic. So so good!



Topped some pesto macaroni with them.

Chocolate banana bread cupcakes

Yummy soft and tender cupcakes from the Chocolate Covered Katie cookbook. I used coconut sugar and whole wheat flour to make them healthier.

Mexican Lasagna (Crockpot Enchiladas)

This was from the Fix It And Forget It book. It was delicious! Not authentic in any way though. It has pinto beans, corn, Daiya cheese, onion and tomatoes plus tomato sauce on top. 

Served with Mexican rice and topped with avocado and crema (vegan mayo mixed with lime juice and chili powder)

Healthy applesauce banana oat muffins


Really soft and tender and not too sweet.  Modified recipe from Snacks with Jax on IG.


Preheat oven 375F

In a big bowl, mash 2 ripe bananas, add a fruit cocktail cup, puréed(about 4 oz.), add a scant 1/2 cup coconut sugar, 6oz. applesauce, 4 Tb melted coconut oil, 1 cup quick oats, 3/4 c whole wheat flour, 1 tsp baking powder, 1/2 tsp baking soda, 1 tsp cinnamon, 1/4 tsp salt. Mix until combined. Pour batter into muffin tins and bake for about 20 min or until toothpick inserted comes out clean.

*fruit cocktail was 100% fruit in fruit juice. We get the big packs at Costco.

Pizza wrap.

This was yum! I dusted off the old Foreman grill to make this pizza wrap. I got the idea from madeleine Olivia on YouTube. It’s got tomato sauce, Daiya mozzarella, olives, cherry Tom and spinach.

I’ve kept the grill out on my counter. I have a feeling it’ll make life easy.

The other night I made a gorgeous sheet pan teriyaki tofu and veg dinner with coconut rice. Here are the leftovers. I served a bit to H and he refused all of it. 😕

Good foods.

This was the chickpea tikka masala recipe from Recipes For Happiness by The Happy Pear. So delicious!

  
This was Sunday breakfast. I made the omelette using the “egg” recipe for the breakfast sandwich in Vegan Comfort Classics. Insides are spinach and Daiya cheddar.



I love broiled burgers and veggies. Tip: brush frozen veggie burgers on both sides with bbq sauce before broiling.
