Tuesday Eats.

Wow, so glad that Tuesday's over and done with! For a second there I thought it was only Monday! I came home from work and didn't want to cook anything so I made a serious sandwich. I mean, look at it! There are many layers in that thing. Lettuce, spinach, tomato, red onion, piccallili, jalapenos, two different kinds of mustard, Vegenaise, sauerkraut, oil, vinegar and not to mention vegan bologna and vegan cheese slices, all on jewish rye. I enjoyed the hell out of it. Oh yeah, there is a small mountain of Sweet and Spicy Chili Doritos which are accidentally vegan by the way.

For dessert, I celebrated with mint chip soy ice cream by Double Rainbow. I added some chocolate sprinkles for fun.

A Good Sandwich.

As you know from past blog posts, I love sandwiches. Sometimes you get lazy and home made sandwiches can be pretty boring but when you put a little effort into it with different breads and good ingredients, they are delicious. Last night I made this sandwich for dinner on russian rye. It has avocado, red bell pepper, cucumber, vegan cashew based cheese (that I made a while ago), sprouts, tomato and vegenaise. I squeezed some lemon and sprinkled salt and pepper. My brother and I shared it. So good!

Serious About Sandwiches.

I've been on a sandwich kick lately. I don't think it'll end anytime soon. The fun part is deciding on ingredients and going shopping for them because there are also a zillion different combinations that make a damn good sandwich.

This one is Yves veggie "ham", vegan american slices, tomato, red onion, sauerkraut, Vegenaise on german sunflower seed rye. I've made this about three times this week.

This one is a special sandwich for the weekend. We don't have a bbq grill anymore so we went out and got one of those tiny ones at CVS that is perfect for the two of us. Fits on our patio table and grills enough hot dogs (for him) and veggies (for me). This sandwich was an inspiration I had on Friday that I finally go to carry out today. Grilled portobello mushroom that was brushed with olive oil and crushed garlic, grilled red onions and grilled red bell pepper with Vegenaise mixed with Dill n' Garlic Miso Mayo on a kaiser roll. This was so damn good, I can't even put it into words. Non-vegan restaurants take note! Vegans would like sandwiches like this on your menu.

Ham and Radish on Rye.

I received some coupons from the folks at French Meadow Bakery to try out some of their products. All their products are made with natural organic ingredients and if you want to find them at your local health food store, you'll find them in the refrigerated/freezer section. I picked up a loaf of this really nice rye bread with whole grain and used it for my sandwich.

A thin slice of dense rye bread slathered with vegenaise, german mustard and topped with a slice of Yves veggie ham and radish slices. This was really delicious. I liked the bread a lot and it reminded me of the Mestemacher German breads that I also like. My next sandwich with this bread will be grilled rye with veggie ham and melting Daiya cheese!
