Healthy wraps for lunch today made with collard greens and zucchini slices as wrappers and two different nut spreads and an assortment of fresh veggies. The spread on the left is the black pepper cashew cheeze (cashews, lemon juice, miso, water, black pepper) from Ani Phyo's raw book. I added yellow miso for some saltiness. The one on the right is the Sun-dried tomato pâté from "You Won't Believe It's Vegan". I didn't have enough sun-dried tomatoes so it's not as red in color but it's got good stuff in it: almonds, sunflower seeds, walnuts, olive oil, parsley, garlic, lemon juice and black olives.

I Love Grilled Food!
Backyard grilling again this weekend. I love it. Vegetables taste so much better when they're grilled over open flame. They get all charred and tender and caramelized and so juicy.

The usual suspects: yellow and red bell pepper, mushrooms, onions, zucchini, tomato and baked potatoes. Tofu not pictured.

Pita sandwich wrap with grilled tofu and veggies with lemon-garlic mayo sauce.

Sandwich, mid bite!

Broiled Vegetables in Charmoula Marinade and Couscous

I have this really beautiful little book called The Vegetarian Table: North Africa and there a so many exotic dishes that I've been wanting to try. I love broiling vegetables because it only takes 10 minutes or so. The couscous took 5 minutes. Very easy and very delicious. The marinade is Moroccan in origin and has beautiful flavors of olive oil, lemon juice, cumin, paprika, ginger, cilantro and marjoram.

This was lunch.

This was dinner. I made a sauce from Vegenaise, lemon juice and Sriracha sauce. Yum!

Chickpea-Dal Fritters!

Here's another re-vamp idea. Take about a cup of last night's leftover dal, drain it of all the liquid, add it to a bowl of mashed chickpeas (1 can's worth), a handful of chickpea flour, 1 tsp baking powder, 2 TB regular flour, garlic powder, onion powder, coriander and cumin. Shape into little patties and fry in canola oil. YUM! I usually hate to fry so when I do, I make sure it's going to be worth it. These were worth it! It's like falafel and you know how much I loooooooove falafel!

Delicious in wrap with tahini sauce.

Mock Crab Cake Wrap, Cauliflower White Bean Dip

Yesterday's "crab" cakes made beautiful wraps for lunch today.

Also on the lunch menu: cauliflower white bean dip. This was adapted from the "Lower Fat Cauliflower Hummus" recipe from Veganomicon. I didn't have any chickpeas so I used white beans as a nice and creamy substitute.

VeganMoFo: Hominy and Bean Burger Wrap

Yes. Another revamp recipe where I take leftovers and turn them into a new dish. I had soo much leftover posole stew that turned really thick overnight in the fridge. I used half of it, drained off the liquid and mashed it with chickpeas that I had in the fridge and added chopped onions, cilantro, masa flour, bread crumbs, salt and pepper. I shaped them into patties, sprinkled a little masa flour over them and baked them in the oven for about a half hour, flipping halfway. I had the idea to make wraps because I had whole wheat flour tortillas and ripe avocados. They were so good! I spiked some vegan mayo with lime juice and hot sauce to complete the wrap, along with fresh lettuce and tomato.

Quick Foods.

Lunch. This was simply taking cold leftover tofu and cabbage from yesterday's dinner (Mango Chutney Hoisin Tofu), chopping it up, mixing it with vegan mayo and curry powder and enjoying it in a wrap with spinach. It was....okay. I think it was a little sweet for my taste and became a little overwhelming after every bite. Looks pretty though!

Dinner. I wanted something quick and comfort foody. I made the 'Instant Cheez-It' sauce from The Ultimate Uncheese Cookbook, and boiled a cup of pasta to make this shells and cheese supper. It was nice and creamy. My additions to the sauce: a little soy sauce and yellow mustard for more salty tang.

Detox Week 1, Day 6
Husband and I went grocery shopping and spent $27 on loads of fruits and vegetables. Some of the things we got: lettuce, tomatoes, cilantro, avocados, spinach, zucchini, red bell peppers, yellow bell peppers, butternut squash, sweet potatoes, celery, jalapeno peppers, granny smith apples, fuji apples, nectarines, bosc pears, bananas and fresh roasted peanuts. Some organic, some not. A very affordable and lovely haul if I do say so myself!
Saturday is quite a lazy day for me. I usually do a few chores in the morning and then just chill out the rest of the day. I wanted to spend the least amount of time in the kitchen today. At least that's what I tried to do. I didn't cook anything from You Are What You Eat today but I know I used ingredients that are A-OK in Gillian's book!

Breakfast was this berry blast smoothie that had strawberries, blueberries, blackberries, dates and apple.
Mid morning snack was a handful of fresh roasted peanuts in the shell (no salt) and late afternoon was a banana and a handful of raisins. I also had a cup of lemongrass tea.

Lunch was a rendition of last night's dinner. I had to use up these sprouted grain tortillas before they went bad as there are no preservatives in them. I made a black bean wrap with fresh yellow peppers, fresh homemade guacamole and salsa.

Salsa made with fresh ripe roma tomatoes that we bought today.

My husband is a snacky kind of guy so I had the idea to make these baked tortilla chips. I just cut up a couple of sprouted grain tortillas and put them into the oven on a lightly oiled baking sheet at 400 F for about 4 minutes. You can tell the bottom ones are burnt. That was my first go at them and I left them in too long! These were so nice. They baked up perfectly crisp. I liked them so much that I only ate half of my wrap and abandoned the other tortilla half to use a few chips to scoop up the beans. I think these will be my new favorite snack after the diet instead of crackers.

Dinner was a salad of green leaf lettuce, spinach, red onions, red and yellow peppers, thinly sliced cucumber and sunflower seeds drizzled with yummy goddess dressing.

Detox Week 1, Day 5
I'm feeling good, very "light" and more energetic. I know that I have a tendency to overeat and I noticed that with this diet, I've been feeling full faster and eating smaller portions. And as a result I don't feel as sluggish and heavy. I worked out yesterday for 45 minutes so that contributed greatly to how I feel. I'm definitely going to continue on with it.
So on to the food! I realize I kind of "freestyled" it and didn't make anything from You Are What You Eat today.

Breakfast was a mug o' oatmeal. I cut back my portion a bit, 1/4 cup instead of 1/2 cup. I added bananas, raisins, sesame seeds and mixed in some homemade date syrup.

Mid-morning and pre-workout snack was this delicious strawberry-banana-soymilk smoothie.

Lunch was a small salad w/ 2 tsp goddess dressing and lemon juice.
Late afternoon snack was a brown rice cake w/ peanut butter and a drizzle of brown rice syrup. And in the evening after an hour walk with Buster, an apple and half a carrot. (no pictures!)

Dinner was a grilled tofu wrap in a sprouted grain tortilla with veggies, fresh homemade salsa and guacamole. The tofu is extra firm and was marinated in olive oil, low salt soy sauce, garlic, black pepper and salt-free seasoning.
Today I took Buster for a walk with our neighbor Shannon and her dogs Wendy and Lucy. It was a lovely walk in the rain through a one-mile oval of neighborhood streets (that was initially laid out to be a race track back in it's day) and afterwards Shannon produced a bag of homemade vegan Snickerdoodle cookies! Imagine my delight! Too bad I can't eat them now as this diet forbids sweets but I have carefully wrapped each cookie in cling wrap and froze them for after the diet. Can't wait to eat them! Shannon by the way creates a cute and funny comic strip featuring both of her dogs called "The Adventures of Wendy and Lucy". Check it out: http://www.taowal.blogspot.com.

I even got a recipe!

"Save-the-Tuna" Wrap + Yummy Date Cake
I made a batch of Ani Phyo's "Save-the-Tuna" paté yesterday to make these wraps for me and my husband for lunch. It's a sunflower seed paté that has chopped celery, onions and grated carrots. It's really delicious and I'm so pleased that my husband likes it. He says it reminds him of those little Starkist Tuna lunch mixes that comes in a can with crackers on the side. This paté goes very well with crackers by the way.

Along with the paté, I added collard greens, yellow bell peppers, onions (that were marinated in balsamic vinegar), carrots and cucumber.
I haven't had cake since christmas and I've been craving it like crazy. I haven't bought flour on purpose because I wanted to keep away from the temptation to bake. But today I was desperate and I had exactly 1 cup of flour left in my pantry, which was the perfect amount to make date cake! And luckily I bought a package of dates a few days ago so I was good to go. This cake is seriously moist and really sweet and just gorgeous.

Look at that! Recipe for the cake is here. Be sure to sub soymilk for the milk!
