Hello There, Taco Salad.

This. Was. Good. Leftover chili on a bed of green leaf lettuce, carrots, green bell peppers, tomatoes and topped with onions, crispy homemade tortilla chips and vegan ranch. Yuuuuuummmmmm! Looking at this now makes me want to make another one.

Ooooh! That's beautiful. Everything looks so colorful and nicely balanced (especially texture-wise with the crispy and the chewy and the soft, mmm).

I keep saying I'm going to get around to making my own tortilla chips someday. You've provided yet another cook-crafting inspiration! ;D

My vegan ranch is simply vegan mayo, lemon juice, garlic powder, onion powder, dried parsley and a splash of plain soy or rice milk.

YUM. glad the taco salad turned out as wonderfully as it seemed like it would! those tortilla chips especially look delish!

fyi - i ended up making vegan chili last night and it turned out pretty well too! wish i could make my leftovers into a taco salad but instead i'll just be re-heating and eating it with some lavash.... (not as good)
