I made chilaquiles today from The Whole Chile Pepper Book and they turned out great. I had them for lunch with a side of beans. #chilaquiles #thewholechilepepperbook
Chilaquiles are delicious and worth the effort to make. Yours look so good. I have usually made them with salsa verde (sometimes homemade, sometimes with bought sauce), and I have discovered that it's nice to add Just Egg, and/or Miyoko's liquid moz on top, and bake until set. Then a hefty sprinkle of chopped cilantro and good squeeze of lime.

Sounds delicious I’ll have to try the liquid mozzarella.
