Healthy Chickpea Curry.

Made a delicious curry today that was also very healthy. Just the usual onions, garlic, ginger, tomatoes and spices and a nice squeeze of lime.

Served with whole wheat pita.

Sunday Sandwich.

Well I guess breakfast didn't hold me over that long. My appetite has been off the charts lately. I'm always hungry! So this is what I made for late lunch. Grilled portobello, onion and zucchini with melted Daiya cheese. I put Vegenaise and pesto on the toasted rye.

This was breakfast today. These fry ups are becoming a habit. So good and so filling. This will do me until early dinner.

Grilled Melty Sandwich!

Yesterday I came across this video on youtube and was mesmerized. I decided I was going to make a gooey melty sandwich for myself on the weekend. Went out to the store and got some good rye bread, Daiya cheese and roasted peppers. I made some caramelized onions first and then layered it all up and grilled it in my pan. It was so yummy. I served it with ginger sesame coleslaw.

Poirot and burritos.

Got off early so I came home and made rice, cheesy beans, sautéed chipotle tofu and corn salsa to make burritos. Then I plopped myself in front of the tv to watch Poirot. This is the life!

Sauteed tofu with onions and lots of dry spices like chipotle powder, smoked paprika, granulated garlic, mesquite, cumin, salt pepper... and a dash of Bragg's Liquid Aminos.

Burrito bar. From L to R; Corn salsa, cheesy beans (refried beans with some vegan cheese mixed in), sauteed tofu, red rice (just rice cooked with onion, garlic, water and a can of El Pato tomato sauce).


Chipotle Tabasco is soooo good.
