Weekend food.



Meatloaf sandwich again, this time with homemade potato salad on the side. It's the "retro" potato salad recipe from 1,000 Vegan Recipes.


I made a delicious batch of "potato cheese" that I wanted to make mac n cheese with. Mine has potatoes, onions, a couple of carrots, cashews, garlic, herbs, white miso, salt, pepper and tamari.


It was absolutely perfect with macaroni pasta. So creamy.


I like salty things so I added a little Hawaiian lava finishing salt on top. Even more delicious! I get my salt from Salty Wahine here.

Mac & "Cheese" & Sauteed Zucchini and Mushrooms


Well this was certainly delicious! I made the Veg News mac today and it was so good. The sauce is so velvety and creamy. The Veg News "cheese" sauce is basically tender vegetables (shallot, carrot and potato) that are blended with cashews, margarine and flavorings like garlic, mustard etc. I made my sauce with onions, potato, carrot and red bell peppers. Came out more orange in color because of the peppers. I added a side of simple sauteed zucchini and mushrooms in garlic.

Sunflower Mac n Cheez, Fountain of Health Hummus.


I made a vegan mac n cheez today loosely based off the Veg News mac and cheese recipe. The base is usually cashews and some veggies like potato, carrots and shallots. Well I didn't have cashews so I used soaked sunflower seeds, potatoes, kabocha squash, onions, carrots and miso. Came out so creamy! I also added about 1/2 cup of Daiya and stirred it in at the end. Would you like some mac with your cheez?


Fountain of Health hummus now available at select RALPHS supermarkets in southern California! This is my favorite packaged hummus that I found on my last trip back to Montreal. It's made in Quebec (under Fontaine Sante) and it's so lovely. Creamy and fluffy and just perfect! I got two flavors. I hope they never stop selling it here. This made my day today.

Sunflower Mac n Cheez recipe

Ingredients:
1/2 box of macaroni
1 potato, peeled and diced
1 onion, peeled and chopped
1/2 cup carrots, sliced
1/2 of a small kabocha squash, peeled and sliced
1 cup raw, hulled sunflower seeds that have been soaked in hot water for about 15 minutes
2 cloves garlic, minced
1 heaping tablespoon yellow miso
1/4 to 1/2 cup plain almond or soymilk
2 TB lemon juice
1 tsp. paprika
2 tsp. salt
1/2 cup Daiya cheese

Method:
Place the potatoes, onions, carrots and kabocha squash in a saucepan and cover with water. Bring to a boil and let simmer for about 15 minutes or until vegetables are tender.
Cook macaroni in salted water. While pasta is cooking: drain the sunflower seeds and put the sunflower seeds, garlic, miso, 1/4 cup almond milk, lemon juice, paprika and salt in a blender and blend until smooth. You may add more almond milk if it's not smooth enough.
When vegetables are cooked, drain the water that they were cooking in and add the vegetables to the sauce in the blender. Blend for about 2 minutes or until all ingredients come together and the sauce is smooth. When pasta is finished cooking, drain and put back into the pot. Add the sauce, stir in the Daiya. You can turn on the heat a little to get the Daiya to melt. Usually, the sauce will be pretty hot coming from my high speed blender.

Xmas 2010.

Hey! Hope everyone is having a great holiday weekend. I spent xmas eve with my parents, brother and husband. I made a nice xmas dinner and afterwards we opened presents, drank mulled wine and played board games. Had a great time!


This was dinner. Up front and going clockwise: dijon glazed carrots, VegNews mac n cheez, boiled green beans, mashed potatoes, stuffing, Bryanna's vegan brown gravy (I added olive oil to make it not fat-free), and roasted green beans.


Lots of carbs but oh so good!


On xmas day, Marc and I went over to our friends Hope and Gary's house for dinner. I brought over my famous spinach artichoke dip.


Hope and I baked! These are unadorned gingerbread and vanilla cupcakes from 'Vegan Cupcakes Take Over The World'. All dessert pics were taken by Hope with her giant digital camera. Those are her adorable teapots behind.


Gingerbread with lemony "cream cheez" frosting. These were amazing!


All festive and christmas-y.


What!???!! Cutest cupcake in the world! This is the tiramisu cupcake. Oh heaven...


These were my favorite. I haven't had tiramisu in over four years. This was absolute vegan perfection.

VegNews Mac and Cheese


Tried the Veg News mac and cheese today which turned out quite delicious! I have to admit, at first bite I was a little underwhelmed but then a few bites later, I was hooked. I went back for seconds, thirds and fourths! I must have not eaten much for breakfast. But yes, it really was delicious, creamy and addicting. I used Ezekiel whole grain bread for my breadcrumb topping which added a nice crunch.

New Farm Mac and Cheese


I've heard so many good things about the mac n cheese from the New Farm Vegetarian Cookbook. I was at a used bookstore over the weekend and found a copy for $7 and tried out the recipe tonight. I have to say, I wasn't overly impressed. I mean it's really good and creamy and everything. It's just that it is very much like other nutritional yeast based cheese sauces that I've tried before. I don't know if I'll make it again: 1. because it's too similar to other sauces I've made before. 2. it has quite a bit of fat in it from the margarine to the oil. 3. I think if I'm going to go the fatty route, I'll use Vegan Dad's nut based cheese sauce.

But I'm not sorry that I tried this. The book is so hippie and fun that I look forward to trying other recipes from it.

Shells n Cheez Please.


This was dinner. It's the "Instant Cheez It" sauce from The Ultimate Uncheese Cookbook. You prepare it by making a dry mix of ingredients which you keep in a storage container and use 1/2 cup at a time that you whisk with water or nondairy milk over medium heat until it gets thick and bubbly. Then you can add it to your favorite pasta or as a topping for vegetables or anything at all. I had mine with shells. So creamy and much better than that Velveeta crap!

Edited to add: This is still considered "cooking out of the pantry"!

Pantry staples used:
pasta
nutritional yeast
flour
spices/herbs: paprika, turmeric, garlic powder, onion powder, dill, dry mustard, salt, pepper, sugar

Other ingredients:
plain soymilk
margarine
wet mustard

Ingredients I had to purchase: none

Gluten-Free Mac n Cheese


Sometime last year I went to Big Lots and found this gluten-free corn pasta at about $1.50 a bag. I should have gotten more because this pasta tastes great! It has a similar texture to that of wheat pasta and doesn't taste very "corny" at all, especially if it's covered in a creamy sauce like the one I made. The sauce is just a quick thing I whipped up that has garlic, olive oil, margarine, nutritional yeast, miso paste, water, salt, pepper, mustard powder, lemon and paprika. Duh-licious!

Four Alarm Chili

Ok so I had a bunch of mac n cheeze leftovers in my fridge and I had every intention of eating only that tonight but then I had this genius idea of making chili...


...the Four alarm chili from 1,000 Vegan Recipes that is...


...and combining it with the mac. Now it's Four Alarm Chili Mac! Super good. The chili is going to be even better tomorrow. I have used up all the mac so I might turn it into taco salad or just having it with cornbread. We'll see!

Veggie Grill!

Last Friday I met my good friend Cami and we headed out to lunch at Veggie Grill as a treat for her birthday that just passed. This was her first time trying out the food and it was great! Here are some pics I stole from her camera. Today only after 4pm, they have a special for a free meal for your Veggie Grill Virgin friend! Bring in a friend that has not dined at VG and they get a free meal! I'd go if I didn't have so much leftovers in the fridge!

Smoothies, Baked Mac and Cheeze


Started my day off with a delicious peanut butter banana smoothie. This was like eating dessert!


This is the baked mac and cheeze recipe from 1,000 Vegan Recipes. It was pretty good. There are no nuts in this recipe so it wasn't as creamy but still very satisfying with a side of steamed broccoli.




For dessert, the mango lassi also from 1,000 Vegan Recipes. Very nice, thick and creamy. I couldn't finish the whole thing though. It was too much so I saved the rest for breakfast tomorrow.

VeganMoFo: Weekend Cooking



I love to cook on the weekends. It's a leisurely thing I like to do on Saturday mornings. This morning I got up early and went shopping for ingredients to make the following:


Vegan Dad's mac and cheese! My favorite! With toasty panko bread crumbs on top.


With a side of beautifully roasted veggies: butternut squash, red peppers, baby carrots, onions, sweet potato and cremini mushrooms with olive oil, fresh rosemary and thyme.


I made these at 9pm last night to have for breakfast this morning! They are Vegan Brunch's "Bakery Style Berry Muffins". I used quebec wild blueberries and mango. They were perfection.


Buster likes to nap on the weekends. I tried to get a pic but he woke up and saw me!

Dinner in Bed.


After having breakfast in bed, then lunch I thought, why not dinner? So here it is. After a nice productive day at work I came home to this. Baked mac n "cheese", cucumber salad and a side of sweet melon. It was perfect.

Shells n Cheese please.



This dish was a result of a fortunate accident that happened at work. We make raw vegan kale chips covered in "cheezy" sauce and then dehydrate them, package them and sell them to health food stores (like Whole Foods!). Anyway, I was in charge of making the cheez sauce when I overheated the VitaMix and turned the raw sauce into a hot soup! So obviously the cooked sauce was unusable. So into two cartons it went and my coworker and I could do as we please with this cheez. I heated it up and cooked some pasta shells, tossed it all together and topped it with panko. It got baked for about 10 minutes and put under a broiler for a few. It was yuuuuuummy! (sorry can't give away recipe for cheez sauce!)

Quick Foods.


Lunch. This was simply taking cold leftover tofu and cabbage from yesterday's dinner (Mango Chutney Hoisin Tofu), chopping it up, mixing it with vegan mayo and curry powder and enjoying it in a wrap with spinach. It was....okay. I think it was a little sweet for my taste and became a little overwhelming after every bite. Looks pretty though!


Dinner. I wanted something quick and comfort foody. I made the 'Instant Cheez-It' sauce from The Ultimate Uncheese Cookbook, and boiled a cup of pasta to make this shells and cheese supper. It was nice and creamy. My additions to the sauce: a little soy sauce and yellow mustard for more salty tang.

Make favorite dish. Eat. Repeat.

I have this annoying habit when I really like something I will have it over and over without tiring of it. At least for a while. It could be movies (I've watched some films over 10 times), music (currently Doctor Who series 4 soundtrack on a continuous loop), books (I've read 'I Capture the Castle' more times than I can count) and finally food. If I like something and if it always turns out perfectly, I'll make it again. And again. And again... Drives my husband nuts.

Well tonight was one of those nights. I know I made Vegan Dad's mac and cheese a few weeks ago but I really wanted it tonight. It's cool and crisp out and I wanted some comfort food with a comfort vegetable. I made a side dish of garlic broccoli in which I burned some of the garlic but it still came out good.

I did do something a little different. I used regular yellow mustard instead of the dijon that the recipe called for. Good!

Mac n Cheezy.

There's nothing better than comfort food on the weekend. I was up early today and was watching some quality tv and a cooking show was on. A wife was cooking an anniversary meal for her husband and she made him mac and cheese alongside the obligatory piece of meat. The mac and cheese captured my attention and I knew that I had to make it, like right away. I pulled out Vegan Dad's mac and cheese recipe which happens to be the best vegan mac I've tried by far. It's got a creamy cashew base and is flavored with things like garlic and onion powder, miso paste (my fave) and nutritional yeast. It's freaking delicious. Just look at it!




Perfectly creamy mac n cheez with a side of garlicky baby bok choy.
