Christmas Foods 2015!

Happy Holidays everyone! Hope you are enjoying your weekend. I'm just going to dump all my food pics. I am so full and fat from it all! Love!


My husband and I had dinner on xmas eve at our friend's place. Every year they have made a vegan friendly dinner for us. This year vegan Yorkshire puddings were a first!



Delia Smith recipe using soymilk, ener-g egg replacer and oil instead of animal products. They were heavenly!



All together now. My plate. I made the tofurky roast and orange herb gravy.


My friend Hope is a non-vegan vegan baker! She's amazing. Everything just comes out perfect.


These are Fran Costigan's Chocolate Tortes TO LIVE FOR. They really are.

Every year we make these Espresso Oatmeal Chip cookies from VCIYCJ.

I got a genius brainwave the next day. Leftover ganache and coconut milk with a little agave made delicious hot chocolate!

Christmas day with my folks and brother. I made breakfast. Vegan Brunch's pastry puffs using Field Roast sausage instead of tempeh. Amazing everytime.

"Sausage Rolls".


Happy New Year guys! Here's wishing we all are happy and healthy this year and every year. I woke up around 9am this morning and decided to make sausage rolls for breakfast. I used the tempeh sausage pastry puffs recipe from Vegan Brunch as a guideline and instead of using tempeh, I substituted chopped leftover celebration roast from last night's dinner. What a success! They came out fab and were really good with a hot cup of coffee and a coconut bar.

Vegan Steak and Mushroom Pie


The veggies.


Some ingredients.


The insides before topping with puff pastry.


From the oven to the table, all puffed and golden!


On the plate with a side of mashed potatoes. This is the best comfort food ever.

The Recipe:

Steak and mushroom pie

3 TB vegan margarine + 2 TB olive oil
1 onion, chopped
2 cloves garlic, chopped
2 carrots, sliced
2 ribs celery, sliced
1 cup dry protein soy chunks rehydrated in boiling water until soft.
2 TB flour
1 cup veggie broth
1 tsp red miso
1 tsp vegemite or marmite
1 TB tomato paste
1 TB vegan worcestershire sauce or soy sauce
1 tsp thyme
1 container mushrooms sliced
salt and pepper to taste
frozen puff pastry sheet, thawed (a good vegan brand is Pepperidge Farm)

1. Preheat oven to 400 degrees F.
2. Put the kettle on and boil water and pour over soy chunks in a bowl and let sit until soy chunks are soft.
3. Drain the hydrated soy chunks and put them in to a bowl. Add a couple of TB of flour and toss to coat the soy chunks.
4. Heat margarine in a pan on med high heat. Add soy chunks to pan and brown evenly, about 5 minutes. Remove soy chunks from pan and set aside.
5. Add oil to the pan and add the vegetables. Cook for a about 4 minutes. Then add vegetable broth, miso, marmite, tomato paste, worcestershire sauce and thyme to the pan. Cook for a few more minutes and then add the mushrooms. Add the soy chunks back to the pan, season with salt and pepper and bring to a boil. Turn heat to low and cover and simmer until veggies are tender.
6. Pour mixture into a baking dish and top with puff pastry sheets. Bake for 20 minutes or until pastry is golden and puffy.

Puff Pastry Quiche


Got the recipe here but I used a whole 14oz package of firm tofu and added a bit of garlic powder and about 2 TB of chickpea flour in the filling. You can't tell but there are mushrooms in there too. Came out very tasty!

VeganMoFo: Puff Pastry Calzones and Coconut Cake



This weekend was great. Got to see a good friend from long ago yesterday, went out to a movie with husband today (we saw an excellent documentary called Marwencol) AND I got to make some delicious food.


These calzones were a cinch. I had puff pastry in my freezer that needed to be used as well as 1/2 a tube of Gimme Lean vegan sausage. I cooked it up with onions, garlic, mushrooms, spinach and olives and seasoned with fennel, sage, italian herbs, crushed red pepper and filled puff pastry with the mixture along with Daiya vegan cheese. So freaking good!


Vegans can get excited about vegan cheese again, thanks to Daiya. Melty and gooey. It worked so well in these calzones.


Yesterday I thought to myself "I want coconut cake". I went into the kitchen and 30 minutes later, I had a beautiful snow white frosted cake with delicious coconut flavor! I need to make this more often and maybe do it in layers next time with some kind of lemon filling. Cake recipe here.
