Shakshuka and Sausage & Kabocha burger.

 

Shakshuka recipe from Tables of North Africa cookbook using Just Egg. And the most delicious burger! I made @beyondmeat spicy sausage (that I got from @dollartree) and airfried kabocha squash with curry powder and panko and I made a sandwich with curry mayo and Dijon slaw. Amazing

New rice cooker.

Just wanted to document that we got a new rice cooker. Our 8 year old expensive $110  Zojirushi with flowers on it died the other day. I was sad. Was hoping it would go for 10+ years. I picked up this cheaper model for  $64 which wasn’t really cheap. But this brand makes very good rice! Hopefully will last a long time!


Made a test batch of 2 cups. Delicious!

Crockpot Smoky Vegetable Bean Soup

 Delicious recipe adapted from the Soup recipe from Kathy’s Vegan Kitchen blog. I used 32 oz marinara instead of diced tomatoes, added sautéed impossible sausage, used a cup of dried cranberry beans instead of canned and 2 TB of nutritional yeast. It is essential to top with avocado, tortilla chips, shredded cabbage, onion, cilantro and hot sauce. Vegan cheese if you have it!

Chopped salad. Very nutritious.

 Delicious chopped salad with lots of veg. Romaine, spinach, broccoli, red peppers, celery, red onion, red cabbage, clover and broccoli sprouts, mushrooms, @bubbiespickles sauerkraut, and nuts. Dressing is olive oil, apple cider vinegar, agave syrup, garlic powder, curry powder, @traderjoes citrus garlic seasoning, @bragg Sprinkle, cayenne, @bragg liquid aminos and black pepper.

Pot pie.

Yummy! I needed to use up a frozen pie crust, a box of puff pastry shells and a bunch of veg. I made this pot pie and it turned out delicious! When I was cooking the filling, the gravy was a bit thin so I thickened it with a couple spoonfuls of Bisto Gravy granules. 👍🏼

Jambalaya with airfryer tofu


This was delicious. I seasoned the tofu with salt, pepper, garlic, onion powder, soy sauce and liquid smoke before air frying. Then added to the vegetables diced tomatoes, spices, broth and rice and let it cook for 30 minutes.

Soup beans, pickled chow chow and cornbread

 I was intrigued by Appalachian cooking and made soup beans, chow chow and cornbread. I found recipes Here

Because it’s vegan - no ham hock or bacon in the beans. Instead I cooked the pinto beans in the crockpot with sautéed onions, garlic, celery, cumin, coriander, paprika, chili flakes, black pepper, liquid hickory smoke, water, olive oil.

African Curried Coconut Soup with Chickpeas

The Tropical Vegan Kitchen cookbook is really easy to use and filled with amazing recipes. I made the African Curried Coconut Soup with Chickpeas. It’s warming, delicious and very similar in flavors to Thai coconut soups. I added zucchini, mushrooms, poblano peppers, much more garlic, more curry powder and a tiny bit of sugar to help meld the flavors. I used tomato purée instead of diced. I also didn’t add the rice when it was cooking, instead served it with cooked jasmine rice. Definitely making again.

Thai red curry


 

Delicious Thai red curry. This particular brand of curry paste is vegan and tastes really good. Just a bit of heat with lovely flavors. Satisfied my curry craving.
