Palestinian roasted cauliflower soup and Syrian bulgur relish.

A beautiful book with stories and recipes. I think this is going to become a favorite.

I topped the roasted cauliflower soup with pieces of roasted cauliflower and cooked chunks of vegan sausage.

Making Syrian bulgur relish from the book Olive Trees and Honey. The sauce is a delicious combination of pomegranate, molasses, lemon juice, crushed walnuts, olive oil, cumin and tomato paste.

Tossed with the reconstituted bulgur wheat.

Served with a mixed green salad with tahini and balsamic glaze. And bread.

Mushroom and Jackfruit Stew

 Mushroom and Jackfruit Stew on top of mashed potato. This was so delicious! It also has in it: thinly sliced onions, celery, carrots, garlic, mixed herbs, flour, paprika, smoked paprika, cloves, miso paste, tomato paste, mushroom broth, soy sauce, salsa inglesa (vegan substitute for Worcestershire sauce), apple cider vinegar, sugar, salt, pepper, @bistogravyuk granules.

Bhel Puri.

 Bhel Puri for breakfast? It’s got puffed rice and corn flakes so why not! It’s a popular Indian snack that has a crunchy mix of chickpea flour noodles, corn flakes, puffed rice, peanuts and spices. To this you add boiled potatoes, chopped tomatoes, red onions, mint chutney, Bhel Puri chutney which is tamarind based, chat masala powder and lemon. Crunchy, crispy, tangy, spicy, sweet, sour, fresh. It’s so good!

Butter chickpeas curry and naan.

 For lunch I made @plantcrazii recipe for Butter Chickpeas Curry with homemade naan from The Conscious Plant Kitchen blog. This was so delicious! The curry was so luscious and creamy and spiced just right. I used coconut milk instead of vegan oat cream. The naan was delicious and yeast free. It was made with only a few ingredients: flour, baking powder, coconut yogurt and salt. It did take some work to roll them out and cook but they were so good.

 I made overnight crockpot pinto and Flor de Mayo beans. Comes out perfect every time. Montreal style hot dogs (topped with vinegary coleslaw). Delicious!!!!

Tea and sandwiches

 Mama alone tea time is awesome. No interruptions and the tea is still hot! @englishteastore Lady Londonderry tea (strawberry lemon black tea) with really good sandwiches. Eggplant bacon, lettuce, tomato on sourdough and tofu egg on sourdough. Yum.
