Lasagna Lunch.

I used "no boil" noodles today and I didn't make enough sauce! The whole point is having lots of sauce to cook the noodles. My noodles were cooked but it wasn't all saucy the way I usually like lasagna. The flavor was good though. Insides are mixed veggies and almond tofu ricotta. The sauce was a homemade red wine bolognese made with gardein veggie ground.

Homemade Crackers, Sundried Tomato Pate, a Sandwich and Gardein Beef and Broccoli.

Homemade crackers. I forgot to prick the dough so they came out curved!

Sundried tomato pate recipe from You Won't Believe It's Vegan! and some fancy jalapeno cilantro hummus.

The pate is so good! It's nut based and so very creamy. The hummus was ok. I'm not a fan of hummus that uses cumin in their recipe.

A great sandwich on rye german bread: Tofurky italian deli slices, Daiya jalapeno havarti, Bubbie's sauerkraut and tomatoes with russian dressing. So yummy!

I made this beef and broccoli dish the other night using Gardein beef tips. So good!

Quiche Lunch, Tempeh Bacon Sandwich, Native Foods.

Broccoli Spinach Quiche from Vegan Brunch never disappoints.

Sunday Quiche lunch with Paul. I also made fat free fries.

Yesterday's breakfast: Tofurky Tempeh Bacon sandwich. I love the Tofurky tempeh. It's flavored just right with salty smoke and maple syrup.

We went to Native Foods yesterday. This is my husband's sandwich, the Chicken Bacon Avo Club. All vegan!

My BIG SALAD! It's called the Mexican Cobb.

Hummus Sandwich & Whole Wheat Carrot Cake.

Simple dinner for me last night. Homemade hummus on toasted pita bread with cucumber and harissa.

Made a carrot cake when I got home today. I just needed it. Mondays you know...

I cut myself a slice after dinner and my husband brought me a fresh cup of coffee. Was delicious. I used white whole wheat instead of all purpose white flour so it was a heartier cake but still very moist.

Sandwich stuff and Baja Fresh.

Picked up some ingredients for sandwiches this week. I never tried the Tofurky tempeh before. So convenient! I usually make my own tempeh bacon.

Tempeh bacon, Avocado, Lettuce and Tomato sandwich on Dill rye. YUM.

Went to Baja Fresh yesterday. Easy vegan meal and cheap too. The beans and rice plate (no cheese) with a side of corn tortillas, guac and pico de gallo!
