Backlog Photos Of Foods I Ate.

When my husband cooks for me, he almost always makes me pasta. This is a simple spaghetti with marinara (we buy Gina Rispoli, Newman's, or Mezzetta) and Trader Joe's meatless meatballs. Very hearty and filling.

Homemade sandwich on whole grain with Tofurky italian deli, Chao cheese, avocado, red onion, lettuce, tomato and Vegenaise!


Had my sandwich with a cup of Annie's tomato soup. This is so good if you don't have time to make your own soup.

Last Thursday was my birthday and I made my own cake! Chocolate with penuche frosting. I got the frosting recipe from a vintage Betty Crocker cookbook. It's a brown sugar frosting that is sooooo good.

My dad bought me a birthday pizza from Domino's. Thanks Dad!
For my birthday weekend, my husband and I spent time in Santa Barbara. We ate at the following restaurants:

British fish n chip shop. The chips are so good.

While my husband ate fish n chips, I had chips n baked beans.

At The Natural Cafe there are some good vegan options.

Like this sandwich. It's called the "Local's Favorite". Ask for no mayo and get a side of tahini sauce. Such a good little spot to grab lunch.

On our last night we hit up Galanga for amazing Thai food.

Spicy Mint Noodles with tofu. Make sure to order without fish sauce and egg.

Delicious veggie red curry. No fish sauce.

Basket of fries are a must!

No Blame Veggie Tacos. Order without the cheese. I switched out corn for flour tortillas which was a personal preference. It would have been great with corn tortillas too.

Quiche Lunch, Tempeh Bacon Sandwich, Native Foods.

Broccoli Spinach Quiche from Vegan Brunch never disappoints.

Sunday Quiche lunch with Paul. I also made fat free fries.

Yesterday's breakfast: Tofurky Tempeh Bacon sandwich. I love the Tofurky tempeh. It's flavored just right with salty smoke and maple syrup.

We went to Native Foods yesterday. This is my husband's sandwich, the Chicken Bacon Avo Club. All vegan!

My BIG SALAD! It's called the Mexican Cobb.

Dessert and drinks. Strawberry Chocolate parfait was great!

Fat Free Fries!

You basically boil the potato wedges for 5 minutes. Then you drain and add seasonings and shake them up. Then you lay them on a baking sheet and bake them for 25 min at 425F degrees.

They baked up so crisp on the outside and tender on the inside. Addicting!!!

Enjoyed them with faux fish fillets, curry sauce, ketchup and tartar sauce. I do love condiments!

Vegan "Fish n Chips" (or Panko Crusted Tofu)
I've said this before on my blog that I never liked fish but these panko crusted tofu "fish" fillets are so good with homemade tartar sauce, a squeeze of lemon and a side of fries (chips) and peas. The tofu was first marinated for a few hours in an olive oil/miso paste/mustard/seaweed flakes/soy sauce/garlic/ginger mixture and then covered in flour, dipped in almond milk, then coated in panko bread crumbs and baked in the oven. I normally fry these but I wanted to keep it fairly low fat. If you want to fry, by all means do! I'm sure it'll be even crispier and tastier that way.

Tonight's dinner.
Came home from work today and threw some mushrooms, onions and red bell peppers on the grill and served it atop couscous with a side of crinkle cut fries and leftover quiche from the weekend. Yum.

Hawaiian Veggie Burger
Happy 4th! Today we made veggie burgers and I made mine hawaiian style. I have been craving this for a while now. Before I was veggie, I loved Island's Restaurant Hawaiian burger which had a sweet teriyaki sauce and grilled pineapple. I created my own by using the sauce recipe from here, cooked up a Boca vegan burger and added grilled onions and pineapple. It was so good and satisfied my craving. I also made homemade baked fries on the side.

Chickpea and Bulgur Patties (Kibbet Hummus)
Recipe from "Classic Vegetarian Cooking from the Middle East and N. Africa" cookbook. Golden brown patties of chickpeas, bulgur, onions, cilantro, garlic and spices fried in olive oil. These were pretty good. Next time though I might cut back on the bulgur and use more chickpeas. A very carb-errific lunch!
And just to up the carb content even more, I made baked fries to go with it.
