Vegan Brunch: Quiche, Carbs and Cake.

My friend Maile came over today and we had an epic brunch complete with mimosas and The Mindy Project on dvd. The deliciousness of this brunch was enchanced by all the carbs. At least we had some protein from the quiche!


You must have QUICHE when you have a brunch. I used the broccoli recipe from Vegan Brunch of course. It never fails and it's really amazing. If you miss quiche and you're vegan, make this!

Maile made this gorgeous fried rice! She veganized her daddy's recipe and it's damn good!

Weekend Food: Squash and Onion Quiche, 2 Bean Salad & Apple Cider Pumpkin Upside Down Cake.

I got up super early today and went grocery shopping to get ingredients for today's menu. Saturdays are really the only day I feel motivated to make a lot of food. I would have added a fourth dish of potato salad but I forgot to buy potatoes!


Squash and onion quiche from The Ultimate Uncheese Cookbook. You can't see the squash and onion because they were mixed in with the filling! I took a cue from Isa's book Vegan Brunch buy adding cashews to the filling to make it creamier. After a few hours in the fridge, this will be ready to eat.


My husband was in the mood for bean salad so I whipped this one up based on the technicolor bean salad in Linda McCartney's Kitchen cookbook. I left out the green beans.


And now for the best part. I made this gorgeous cake based off of the recipe I saw at a fabulous blog called Midcentury Menu. Find the recipe here. Instead of making the cake from the cake mix instructions, I just used a can of pumpkin and the cake mix and stirred it all together. Worked great! Only thing is when you plop the batter on top of the apples, you have to be careful to spread it all out with a spatula as the batter is thickish.


This cake is so moist and delicious. The apples are so good with the pumpkin flavor of the cake!

VeganMoFo: Good Morning, What's For Breakfast?



I'm kind of sad that it's pretty much impossible for me to go out to a local coffee shop to have breakfast with my friends and family. When I'm surrounded by people eating their eggs, sausage, bacon, pancakes and waffles, I feel a little left out and disappointed with my plain coffee and bowl of fruit, or even worse oatmeal. There are only a handful of places in L.A. that offer vegan breakfasts and brunch like M Cafe de Chaya, The Vegan Joint, Real Food Daily and a few others. But most of these places are kind of expensive and it's hard to convince non-veggies to come along. So I rely on my mad breakfast making skills. I'd like to have a brunch one day where I invite all my friends to try vegan breakfast food. I think they would quickly realize that these foods are just as tasty as their non-vegan counterparts. This is what I'd feature at my brunch.


A delicious creamy frittata filled with potatoes, spinach and other veggies.


Along with the frittata, I'd offer smoky tempeh bacon and fluffy dairy free and egg free pancakes and OJ. Recipe for the pancakes is posted here.

A healthier alternative to eggs. Scrambled tofu with a variety of veggies and whole grain toast. Here's a basic recipe where you can improvise and add as many veggies as you like.


Along with scrambled tofu, soy chorizo and potato hash are the perfect fillings for breakfast burritos!

I think I may have to organize a brunch very soon.
