Gardein Fish Filet Sandwich, Scalloped Potatoes & Vegan Subway!


I love Gardein fish filets. They are just like the real thing and make great sandwiches too.


This is f-ing delicious! Recipe from "You Won't Believe It's Vegan!". Slow cooked scalloped potatoes in a creamy, garlic, onion, dill sauce.


The other night I went to Subway for their VEGAN MALIBU GARDEN sandwich. Subway offers two vegan patties now, this one and a black bean patty. This one is my favorite. I have them pile on the mustard, BBQ sauce, lettuce, tomato, pickles, green peppers, onions, olives, jalapenos, pepperoncini, avocado and oil and vinegar! It's like eating a giant hamburger/sandwichy thing. SO good.

Raw Vegan Wraps.

Healthy wraps for lunch today made with collard greens and zucchini slices as wrappers and two different nut spreads and an assortment of fresh veggies. The spread on the left is the black pepper cashew cheeze (cashews, lemon juice, miso, water, black pepper) from Ani Phyo's raw book. I added yellow miso for some saltiness. The one on the right is the Sun-dried tomato pâté from "You Won't Believe It's Vegan". I didn't have enough sun-dried tomatoes so it's not as red in color but it's got good stuff in it: almonds, sunflower seeds, walnuts, olive oil, parsley, garlic, lemon juice and black olives.

Spelt Pancakes


This is what I had for dinner! I was craving pancakes like crazy so I had to give in and make them. I took the recipe from "You Won't Believe It's Vegan!" and substituted spelt flour for the all purpose flour and rice milk for the soy milk. Perfect pancakes if you ask me.

Sweet Potato Samosa and Cinco de Mayo food.



Today is my day off and I didn't want to waste a chance to cook. I had a large sweet potato to use up so I made baked samosas which were a recipe from 'Vegan Planet'. They are stuffed with mashed sweet potato, peas, onions and seasoned with curry powder and cayenne. I know this is not very "Cinco de Mayo" so I made up for it by making fresh guacamole and chipotle refried bean dip with grilled peppers and onions topped with lettuce, tomato and cool ranch sauce. The ranch is from 'You Won't Believe It's Vegan'. It has pureed tofu in it which I was very wary of at first but after adding some seasonings like taco spices, lemon juice and garlic powder it didn't taste half bad.

Here are the pics. All this food was gobbled up while watching Dodger baseball!


Samosa in a variety of sizes. They were delicious.


Yummy bean dip. Only things missing were jalapeno and olives.


Creamy guacamole made from 2 large avocados.


Oh and I did make something healthy. A mango, orange banana salad.

Food from Mom's Bday Party.

Had a great time at the party. My mom and dad were so cute, smiling together and hugging and singing karaoke (don't ask). Dad even serenaded Mom with a song. I was very happy that Mom had a great time as the wonderful guest of honor. I took some pics of the food that I made and the insides of the birthday cake.

Behold...


"Pizza Casserole" with zucchini, mushrooms, onions, olives, capers, veggie sausage, cashew ricotta, spinach and marinara. Deliciousness. I've made this before and posted the recipe here.


Slow cooked scalloped potatoes. Recipe from "You Won't Believe It's Vegan!" Beautifully rich and creamy potatoes with a nice crust. I am definitely making this again.


Cake! This cake was sooooooooooooooooo sweet! My mouth went numb while eating it. The frosting was out of control sweet. It was super.

Club "Sang-wich".

I mean Club Sandwich of course. I just remembered my husband telling me that the italians in his old neighborhood of St. Leonard (in Quebec, Canada) pronounced it that way which I think is kinda funny....

Anyway, this was my morning, preparing baked tofu and tempeh bacon to make these sandwiches. Tomorrow my husband will find one in his lunch. Hope he likes them!


Baked Tofu and Tempeh Bacon. Recipes from "You Won't Believe It's Vegan!" The tofu was marinated with a mixture of olive oil, mustard, garlic, soy sauce and balsamic vinegar. I slightly overbaked them so they have a crispy exterior.


My sandwich prepared with lots of Vegenaise, lettuce, tomato and crisp toast. I was going to make it a triple stack but I thought that would be too much. The tempeh bacon was good but I have to say not as good as the recipe from Vegan with a Vengeance. But overall this was a very good and satisfying sandwich.

Soup and a Sandwich.

Some days you just can't be bothered. You want something quick with little or no effort but still something that will satisfy your hunger. I've been under the weather for the past few days and I feel better but very lazy to cook. Last night, I just wanted something warm and easy to eat. My throat is still bothering me and I felt like eating more soup. I got a book for x-mas called 'You Won't Believe It's Vegan!' and looked through it to find this easy split pea soup. It's just a matter of throwing things in a pot and stirring every now and again. It was good and I liked it but my favorite split pea soup will always be the one from 'Vegan with a Vengeance', I think because it's got curry powder in it!


Served with some sesame crackers.

Today for lunch I wanted something easy as well. A sandwich fit the bill perfectly. And I had all these great ingredients: lavash bread (an Middle Eastern flatbread), homemade hummus (I also used a recipe from 'You Won't Believe It's Vegan!'), red bell peppers, romaine lettuce, tomatoes and spinach. Everything was ready to go so I just spread some hummus on the bread and layered everything in there. I put more hummus on top of the veggies and drizzled lemon juice and olive oil on top and sprinkled with salt and pepper. Cucumbers would have been good in here too. Or any other crunchy veggie for that matter.


Here it is before being carefully rolled up. I got the whole wheat lavash bread from Trader Joe's. For about 2 bucks you get a package of about 6 large flatbreads. You can also cut the bread in half to make a smaller wrap.


A healthy sandwich with creamy hummus (protein!) and lots of crunchy veggies.
