Bun Cha
Was craving Bun Cha so I did my best to make it happen! It has rice noodles (I didn’t use vermicelli), air fryer tofu and eggplant, fresh veggies and the mouthwatering sauce which has lime juice, soy sauce, garlic, sugar and Thai chilies. I only used two tiny ones but it was still too spicy! Still delicious. π

Eggplant Shakshuka
This eggplant shakshuka is delicious! I got the recipe online at @foodandwine and the smoked paprika in it makes it so smoky and flavorful. I mashed the heck out of it to make the texture more velvety. I served on toasted sourdough and topped with @theiranianvegan tofu feta (the best), homemade Yemeni Zhoug and fresh cilantro. π #shakshuka #eggplant #tofufeta #zhoug #vegan

Banh Xeo
My Banh Xeo technique needs work (I blame my pan!) but the flavors of this did not disappoint! I cooked the crepes with onion and Napa cabbage and stuffed them with carrot and green onion. Then served pieces of the crispy crepe inside lettuce wrap with fresh carrot, green onions, cilantro, mint and dipping sauce. Flavor explosion! π₯ #banhxeo #vegan #vietnamesefood

Delicious and healthy soup for the weekend. Basil flavored vegetable soup Shawrbat Habaq from Palestine and Jordan. I didn’t have lima beans and peas so I threw in some broccoli, zucchini and peppers to make up for it.
