Vegan Beef Stew

Got this recipe idea over here. It uses seitan but instead I used rehydrated soy chunks. I didn't bake my stew in the oven, I just cooked it in a dutch oven on the stove for several hours on very low heat with a lid on it. I added a little more liquid to mine as well. Also other additions: green beans, celery, portobello mushrooms and marmite. I'm not big on eating soy chunks all the time but today I really wanted something meaty and comforting.

I wanted to serve the stew on top of noodles that were like egg noodles. I found these at Vons and they are vegan and have no eggs yay!

These are the deluxe cocoa brownies from Vegan Cookies Invade Your Cookie Jar. I liked them but they were a little too cakey for my liking. It is mostly my fault, my oven is wonky. I'm a fan of dessert so these will keep me happy for the weekend.

Black Bottom Blondies



These came out lovely. I got the recipe from a lush vegan dessert book called 'My Sweet Vegan'. I cannot wait to try more recipes from this book. The recipes are really exciting and inventive. These blondies are delicious, sweet and fudgy. The bottom layer has chocolate chips which melted so there were gooey bits that made it all even better. I'm bringing these to a party tomorrow and I'm sure they'll go over well. I've already sampled 3 or 4 while hanging out on the couch watching Doctor Who reruns. They were the perfect thing with a cuppa tea!

Detox Week 3, Day 19

Only two days left not counting today! I've got a huge list inside my head of all the things I want to cook after my diet. Like black bean empanadas, chocolate cake with peanut butter frosting, stuffed pasta shells, mashed potatoes and miso gravy, monte cristo sandwiches, veggie pot pie, coffee chip cookies, vegan buttermilk biscuits, pan fried tofu with plum sauce and on and on....

Here are today's eats:


Breakfast: Strawberry, Mango, Soymilk smoothie

Snack #1: a tangerine


Lunch: Ani Phyo's "Save the Tuna" sunflower paté on three grain german bread, celery...


...and a salad tossed with olive oil, lemon juice and sprinkled with sumac...


...and beautiful red strawberries.


Snack #2: Walnut date brownies! Quick tip with these brownies: the "batter" tastes great spread on strawberries!

Dinner: Leftover veg stirfry from last night.

Detox Week 3, Day 15

Hello week number three! This is my last week of my diet and I'm feeling good. I'm definitely going to continue eating healthy foods after the diet as much as possible.

This morning it was raining heavily and it made me lazy. I didn't want to do anything but lay in bed or on the couch with a bag of chips watching Doctor Who re-runs. How very tempting. But I didn't do that. I ate breakfast which was a bowl of oatmeal with half a banana, raisins and sesame seeds and a little after I exercised for half an hour.


Lunch: miso soup w/ spinach...


..and green salad w/ walnuts and goddess dressing

Snacks: mid morning I had 1/2 banana and in the afternoon, 1 plain brown rice cake...AND


I also made another batch of carob date brownies. This one has chopped macadamias, almonds and coconut on top. Mmm! This I had with my tea.

Dinner: Grapes and a bowl of aduki bean stew.

Detox Week 2, Day 12

Happy Friday the 13th!

I was running low on the fresh vegetables in my fridge so I took a trip to the grocery. This is what I got: (I love lists.) celery, broccoli, cilantro, green leaf lettuce, spinach, carrots, kale, red grapes, minneolas, lemons, fuji apples, red bell peppers, cabbage, bananas, cucumbers, zucchini, frozen strawberries, whole wheat flour, canned tomatoes, more fire-roasted peanuts in the shell and fresh tortilla chips. All this for $36.

Today's eats:


How healthy can I get than starting out my day with a green smoothie? Breakfast was this banana-date-mango-blueberry-collard greens smoothie. Yum.

Lunch was a cup of split pea soup and veggie crudités with a little bit of hummus. No photo.

Snacks: Mid-morning, a brown rice cake with pb and brown rice syrup. After the dog walk, I had an apple.

It's cold, wet and rainy outside and all I wanted for dinner was something warm and comforting. I had to make a curry. I made one that was based on the Chickpea and Tofu Mild Curry from You Are What You Eat. I omitted the tofu and added a can of diced tomatoes, tomato sauce, garam masala, shiitake mushrooms and cauliflower. I pretty much transformed the recipe into something else haven't I? It was pretty good. I have to say that I am not a huge fan of shiitake mushrooms. This was my first time working with them and I found them to be way too strong and their flavor permeated the curry a little too much. I wish I wouldn't have added them in but oh well...the chickpeas were ace!


Very pretty curry. I served this with brown rice and a salad.

So we all know people will be scoffing all kinds of chocolate tomorrow in honor of St. Valentine right? I am not going to be deprived of gooey chocolatey goodness! If I can't have chocolate, than carob will do. I know some do not appreciate the flavor of carob but I happen to like it. I have fond memories of visiting the local health food store with one of my friends after school and we would get these carob ice cream sandwiches. They were good! Today I made a batch of fudge carob brownies made with carob powder, dates, walnuts and vanilla. I was originally going to make Ms. Gillian McKeith's brownies but her recipe required way too many kinds of nuts and seeds that I just didn't have. So I went online and found this recipe that was perfect. I had all the ingredients except for raw carob, I only had roasted carob but it worked in a pinch. I also added a layer of dessicated coconut on top which made them extra special. Such an easy recipe. It's all mixed up in your blender or food processor, spread into a container and placed into the fridge or freezer. I'd say they took me about 10 minutes to make.


I put my container in the freezer to firm them up a bit. The icy coconut is a nice contrast to the gooey fudginess.


Oh my...how fudgy! I did sample two of these bites and I was filled with delight. They are gooey, sweet and very reminiscent of chocolate. I'm in love with these brownies and will be enjoying these through the weekend.

Vegan Desserts.

Yes, it can be done. A luscious pie, a sweet piece of cake or chewy cookie made without eggs, butter or milk! I'm not much of a baker but I realized I have to be friends with my oven when it comes to dessert. Being a vegan, I can't always go to any market or restaurant and buy or order dessert. I have to make my own or go to a store that specializes in vegan baked goods (Mani's Bakery in L.A. have vegan desserts.) But I don't mind having to bake because making your own means you can share with the ones you love or even have a whole cake to yourself, which is what I've done on occassion. ;)

These are just a sampling of vegan desserts I've made over the past year and a half.


Cherry Crumble Pie. I think this is one of the first vegan desserts I've ever made. I made sure to use a store bought pie crust that had no animal ingredients in it. A good one is Marie Callenders brand that you can find in your grocer's freezer. Recipe here.


Dulce Sin Leche cupcakes from Vegan Cupcakes Take Over the World. These are gorgeous. A moist cupcake with a coconut-caramely flavor and a coconut buttercream topping.


Rum Raisin Cake with Rummy Buttercream. This recipe is from Vegan Cupcakes Take Over the World as well. I just doubled the recipe and made a cake from it.


Mini Cake Donuts. These are unbelievable. Recipe here.


Almond Rosewater Cookies. So soft and chewy and buttery! I veganized a recipe I found here. I substituted Earth Balance margarine for the butter and added sugar for sweetness.


Chocolate Chip Cookies. Gotta have these in your cookie jar at all times.


Peanut Butter Mousse pie with gobs of peanut butter, pretzel pieces and chocolate ganache drizzle. Pie recipe here.

First Blog Post!

I've decided to write a food blog, particularly a vegan food blog. I am obsessed with food and cooking. I always was, even before I became vegan which was about a year and a half ago. I've discovered new foods and ingredients that I would have never tried before. It also feels good to know that all my favorites of the past can almost definitely be done without meat, eggs and dairy.

So I cook. A lot. And I obsessively take photos of my meals because I am proud that I can make food that is delicious, healthy and free of animal products. I decided to share them here in my blog to show those who don't necessarily know much about vegan food that it's not a difficult or restricting dietary choice. It's not all about salads and raw vegetables! Most of the recipes I work with are from cookbooks and ones I find online. I will direct you to the book or website of every recipe I post about. Every now and then I will whip up something myself but I have to say, it's pretty rare.

I've been asked many times (and I'm sure most vegans can say the same) this one question: "What do you eat???" Well, I plan to fill the contents of this blog with the answer to that question. Starting with...

Chocolate Chip Cookie Dough Brownies! Why not start with dessert? Most people like dessert and if they are like me, they fantasize about cake, cookies, brownies and ice cream (the soy variety) all the time. My sweet tooth will be the death of me. And I think it's a good thing to start with a vegan dessert because most are surprised when I tell them that my desserts have no eggs, butter or milk. It can be done! These brownies are really lovely to look at and they taste downright decadent. It's more of a cake like brownie but I intend to try them with a fudgier brownie recipe next time.
