The Tropical Vegan Kitchen cookbook is really easy to use and filled with amazing recipes. I made the African Curried Coconut Soup with Chickpeas. It’s warming, delicious and very similar in flavors to Thai coconut soups. I added zucchini, mushrooms, poblano peppers, much more garlic, more curry powder and a tiny bit of sugar to help meld the flavors. I used tomato purée instead of diced. I also didn’t add the rice when it was cooking, instead served it with cooked jasmine rice. Definitely making again.
