Recipe from Vegan Richa’s book. I love this recipe. I dry roast the spices then make the paste which has lots of garlic, chili and vinegar. I used hot red chili powder. I airfried the jackfruit first before adding it to the pot.
I love many of Vegan Richa's recipes. Have not made this yet, but will try it (pretty much love all Indian veg food). I love spicy. I googled Vindaloo, and learned that it is a recipe that originally comes from Goa (I have Portuguese ancestry). https://en.wikipedia.org/wiki/VindalooAte fresh jackfruit all the time during our 8 years living and working in Cambodia. Have not used tinned jackfruit. But I like your idea to air fry the jackfruit--was yours tinned or fresh? Either will surely benefit from air frying. Thanks!

Mine was young green jackfruit in brine that comes tinned!
