Oh my god these are so good! I’ve never made Papdi Chaat before but I found an easy recipe to make the papdi (the crispy wafer/cracker) and toppings at The Spruce Eats blog. The wafer is topped with a chickpea and potato mixture, then finely chopped cucumber, tomato, onion, cilantro and then with chaat masala, chili powder, coriander mint chutney and tamarind chutney. Explosion of flavor!
