Macaroni w/ Esme's Sauce and Roasted Veggies


If you haven't tried Esme's simple sauce, you must! It's equal parts tahini, miso, nutritional yeast (or mustard), soy sauce, lemon juice (or vinegar), olive oil and a little crushed garlic. Delicious on pasta as seen here. For best results, heat above ingredients in a saucepan and stir til thickened, adding a little water if too thick, then toss with pasta. (I use about 4 TB of each ingredient.)


I accidentally over-roasted my yellow squash, carrots and potatoes. Oops.


But it all tasted delicious anyway!

That looks lovly even if the veggies are over cooked. The sauce recipe sounds interesting.

Hey Kim! I tried this recipe tonight. The sauce was delicious. I sub-ed the nutritional yeast for the mustard. There was something about it that I couldn't put my finger on though. Maybe I went a little heavy with the mustard? All I know is that I definitely will be trying this again. Thanks for the inspiration :)

Hiya! Glad you tried it! What kind of mustard did u use? I used dijon once and it was very strong! I guess you can cut back here and there on the amounts for everything to make it suit your taste. Try less mustard next time or half mustard, half nutr. yeast.

Oh yum, I haven't tried Esme's sauce before and I've got some miso I want to use up. I know what's for dinner tonight!
