Crockpot Lentil Sausage Stew
The pic above is my crockpot with the following ingredients:
Olive oil, 1 celery, 1 onion, 3 cloves garlic, 2 carrots, 1 potato, 1 can cooked brown lentils, 2 vegan apple-sage sausages, 3 Tb tomato paste, rosemary, sage, thyme, a pinch of sugar, 1/2 tsp cumin, salt, pepper, a splash of vinegar and mushroom broth to cover.
After cooking on high for about 5-6 hours, the end result was this delicious stew that was so perfect! I didn’t have to tweak anything at the end.

Chickpea Spinach and Potato Curry
This chickpea spinach and potato curry was so good tonight! Here’s the recipe:
1/2 onion, chopped
2 cloves garlic, minced
1” piece of ginger, peeled and minced
1 tsp each: Garam masala, cumin, turmeric, coriander
1/2 tsp chili (Indian chili powder)
1 tsp salt
Pinch of sugar
1 - 16 oz can of tomato sauce
1 cup coconut milk
1/2 cup chopped broccoli
1 can chickpeas, drained and rinsed
2-3 handfuls of baby spinach, chopped
1 potato, peeled and diced
1/2 cup frozen peas
Sauté onions, garlic and ginger in olive oil on medium high heat, add spices and salt and a splash of water. Stir around and and add all the other ingredients and bring to a boil. Add a little water if it’s too thick. Lower heat and simmer covered for 30-45 min.

Beyond Love.
I’m so happy that Beyond Burgers are now available at Costco. You get a four pack (8 patties total) for about $14. A deal!
Ooohhhh, so beef like. These are my fave vegan burgers.
Cooked 5-6 minutes on each side and done!

Quick pasta bake.
I was heating up marinara sauce to have with pasta but I was in the mood for lasagna so I made a quick ricotta out of half a block of tofu they was in the fridge and some lemon, garlic, olive oil and Italian herbs. I also had Trader Joe’s vegan mozzarella. I added kale to the boiling pasta water at the end. This was yummy!

Vegan scones.
I made scones today! I have never made a vegan recipe that was good. These are great! I used this recipe and used 2 tsp of baking powder for every cup of plain flour: https://lovingitvegan.com/must-try-vegan-scones-jam-whipped-cream/
Served with vegan butter, jam, coconut cream and finger sandwiches (tofu egg salad). And hot tea of course!
