Today I made delicious Moroccan meatballs vegan style. I followed a recipe at The Mediterranean Dish YouTube. It was so easy to do and came out perfect! I used Lightlife vegan ground and used a bit of Panko crumbs for binding. Pan fried in olive oil then used in a meatball wrap with all the fixings; hummus, muhammara (red pepper walnut dip), Zahlouk (eggplant dip) and tahini.
For dinner I had them with spaghetti. Delicious!
