Sometime last year I went to Big Lots and found this
gluten-free corn pasta at about $1.50 a bag. I should have gotten more because this pasta tastes great! It has a similar texture to that of wheat pasta and doesn't taste very "corny" at all, especially if it's covered in a creamy sauce like the one I made. The sauce is just a quick thing I whipped up that has garlic, olive oil, margarine, nutritional yeast, miso paste, water, salt, pepper, mustard powder, lemon and paprika. Duh-licious!

I would love to know your Mac & cheese sauce secret! I've tried a couple from the Uncheese cookbook, and they always wind up a little "gummy", and certainly an acquired taste. Maybe I've used to much nutritional yeast, but I just can't seem to find an easy one that's creamy & tastes *good*.

The sauce I made tonight is not as creamy as a sauce that is nut based. I recommend Vegan Dad's mac and cheese for that:

Yum that looks great, I found a corn pasta recently that's really delicious, great when you're trying to eat less wheat.
Vegan mac n cheese is one of my favorite comfort food stand-bys. the corn pasta sounds really good - I haven't tried many gluten-free pastas, but a nice discount find like that would be a good reason :)
