Risi e Bisi (with carrots!)


This is the Rice and Pea soup from 1,000 Vegan Recipes aka "Risi e Bisi" in Italian. I only had "peas and carrots" in my freezer so I used them. The arborio rice is really creamy and gives the soup a comfort factor. It reminds me of Thai rice porridge. This is dinner tonight after an active day at work.

I have to say, you have come up with some of the most delicious looking and sounding meals. I just spent 20 minutes scrolling through your posts! I think you pretty much sold me on 1000 vegan recipes :)

It's a great cookbook, I highly recommend it! It's one of those books where you flip through when you have a bunch of ingredients in the fridge that you want to use up.
