I used Rancho Gordo black caviar lentils to make a roasted vegetable salad with tahini dressing. It was delicious.
I had a lot of leftover salad left so I decided to mash it with more cooked lentils and added panko crumbs, flour, onion, garlic, cumin and cinnamon. I formed them into patties and cooked in olive oil in a pan. I served them on a bun with harissa mayo (vegan mayo, lime juice, harissa, cumin, agave, salt, pepper) and harissa slaw. Delicious!!!! I was so impressed with this.
