Lentil Tacos and Lentil Chilaquiles Casserole.


I made a really good lentil taco filling the other night to which I added chopped veggie sausage and textured vegetable protein. Came out delicious. Here's a good lentil taco recipe.

I had so much lentil filling leftover that I decided to make this chilaquiles casserole. I added scrambled tofu to the filling as well.

Yummy!

I layered it like this: Flour tortilla pieces/lentil filling/sauce, kind of like a lasagna. The sauce is just canned tomato sauce that I spiced up with cumin, chili powder, oregano and garlic.

How creative to make a casserole out of the leftover taco lentils!! I find myself with leftovers all the time -- thanks for the "round 2" recipe! Can't wait to try! No more taco "meat" salads for lunch! :)
