I made a big pot of soup beans and cornbread. Topped with raw onions and chow chow. So comforting.

Chow-chow! I haven’t heard anyone use that term that wasn’t from my mom and dad’s generation living in WV. Love it and they would approve of how delicious this looks! :)
Yay! I first had chow chow back in the 90’s visiting my mother in law in Quebec, Canada. She was born in the 30’s and is from New Brunswick. She grew up making and canning her own chow chow! Also another relish called Mustard Pickle which was so good.
Beans and cornbread = perfect combination! When weather is cooler (as it now is, chez nous), it's time to make chili with lots of beans...and cornbread. Your cornbread looks great. Having had hits and misses (lots of misses!) over the years re vegan cornbread recipes, this has been my go-to recipe for several years--always turns out great (only changes I make are to use unsweetened soy milk, and light olive oil instead of melted margarine): https://minimalistbaker.com/perfect-vegan-cornbread/
