The other day I made a pot of chai using delicious spices but the tea was too dusty. I had used Al-Kbous from Jordan and it was a little too fine. It made the chai slightly bitter so I had to add more sugar. Anyway I went to the indian market yesterday and picked up a bag of proper ctc assam by Wagh Bakri. I decanted it into a jar with some cardamom pods to infuse it. I also bought a block of jaggery and shaved it with a knife so i could store it in a jar. I microwaved it first for 30 seconds because the block was very hard. Chai is going to be perfect from now on!
