I made this luscious carrot cake this morning. It's from The Superfun Times Vegan Holiday cookbook in the Easter section. It's so good! The icing was improvised using melted Earth Balance, powdered sugar, lemon juice, vanilla, soymilk.
Yum! Carrot cake with a lemony glaze sounds delish! Happy Easter!
