Andersen’s split pea soup

 Omg the split pea soup recipe by @peasoupandersens is delicious! I topped mine with vegan Parmesan, vegan bacon bits and croutons! I used Rancho Gordo split peas and they were perfect. Tip: instead of straining the soup at the end, I just puréed it in my blender.

Pea soup is a fav. This sounds like a nice, classic recipe (and even nicer when you add the extras on top, as you did). This would also be good made with split red lentils. Either way, I always add a good squeeze of lemon juice, stirred in just before serving; a small burst to brighten the flavors.
