Oatcakes

 Yesterday I made Frankenstein Oatcakes, a veganized recipe from @rhubarbandlavender Inspired by the food in the novel. These were delicious, soft, chewy and slightly sweet. I topped them with vegan cheese and fig jam. Perfect with a cup of tea.

I made a version of these--veganized, as you say-- and loved them. I now take one or two to work for a snack. It's been a distressing and stressful year politically, socially, ethically, environmentally, etc. Sending best wishes for a Bonne Année/Feliz Año Nuevo/Happy New Year to you and yours.
