Chinese pork patty rice vegan style

 Another rice cooker meal - a vegan version of Chinese pork patty rice. I used 2 @beyondmeat patties mixed with garlic, green onions, soy sauce, mushroom bouillon powder, mushroom soy sauce, cornstarch, sesame oil, salt and pepper. I filled the rice cooker with jasmine rice, water, soy sauce, sesame oil, green onions, cabbage, gailan and carrots then I shaped the meat into a big patty and placed it on top. Covered and pressed cook. In 20 minutes dinner was ready. I broke up the meat and mixed up the rice and served it with dark sweet soy sauce.

Red chile enchiladas casserole

 Delicious red chile enchiladas casserole topped with homemade salsa. I used up food and produce that needed to go: leftover black beans, potatoes, cauliflower, zucchini, gai lan and onions. I made a red chile sauce recipe that my friend shared with me. Very delicious.

 I love this vegan apple cake, from a recipe I found on Facebook.

 Soooo good. My late mother in law’s recipe never disappoints!

Brothy Beans

 Fantastic crockpot brothy beans, a mix of @rancho_gordo Royal Corona beans and Mayocoba beans with onions, garlic, dried sofrito and olive oil. I stirred in fresh spinach and Calabrian chili flakes when serving. I also had a tomato sandwich on toasted sourdough. #brothybeans

Spaghetti and Chamomile Apple Chai

 Delicious lunch today. I used beyond meat in the sauce. The tea was very warming and spicy.

Little Fatty birthday

 For my birthday yesterday my husband took me to Little Fatty for dinner. It was so delicious! One of my top fave restaurants in LA for sure!
