From Lloyd Rose’s book Crazy Good Vegan. This was delicious. I added tomatoes to mine. And I followed with a fresh juicy plum.

Appreciate your cookbook recommendations, which have lead to many interesting and delicious culinary discoveries. Also--pasta is often on the menu on work days--try to use whole wheat/whole grain pasta when possible--so love the idea of balsamic onion pasta. Will make some version of this when back to work next week (and will make enough for leftovers). Experimenting with making my own pasta, and I love buckwheat, so will try a balsamic onion buckwheat angel hair pasta dish in the near future. Thanks again.
