A Vegan Mouse Thankgiving.

My Thanksgiving dinners for the past five years have been pretty much the same old comfort foods that I love. If you look at my past photos, they probably look very similar to this. Hope everyone is enjoying the holiday!


Roasted brussels sprouts are amazing.


Roasted sweet potatoes are even more amazing.


Homemade herb stuffing was very tasty!


Actually, I've only had the Tofurky roast for the first time last year. Isn't it cute? I basted it with an orange juice, olive oil, soy sauce and fresh herbs mixture.


The whole lot. Also pictured: dijon glazed carrots, green bean casserole and lots of mashed potatoes and orange-herb gravy.


Pumpkin pie with maple cashew "cream".

That looks tasty! I made a Tofurky this year, too. It's my first. (Last year, I made a homemade stuffed vegan roast.) It was good. I'll have to get creative with the basting sauce the next time I make it. Roasted Brussels sprouts are my absolute favorite veggie. Yum! Hope you had a wonderful holiday.

What recipe do you use for the Brussels Sprouts? I am looking to try something new with them (though I love the way we currently make them).

Kim, it all looks AMAZING, but that stuffing is just making it tortuous for me to wait for lunch...

I just toss the brussels in olive oil, salt and pepper and roast until browned. That's it!

I had my first tofurkey roast this year. It was pretty tasty. Wish I had more of the stuffing. it was great. I'm not a big mock meat eater but I did enjoy it!
