Bibimbap with mung bean omelette

Bibimbap for dinner with Airfryer tofu, red peppers, carrots, zucchini plus mung bean egg omelette which is a substitute for Just Egg (recipe at @veganhackspod )! Topped with scallions, pickled ginger and radish and gochujang sauce. So good! #bibimbap #vegan #mungbeanegg




I rinsed and soaked yellow mung beans for four hours and then drained and blended with 1:1 water and adding seasoning: salt, Kala namak and turmeric. The batter was runny yet not too thin or thick. I heated on a low/med oiled pan and let it cook for a few minutes then flipped. It came out very nice and fluffy. I kept the leftover batter in the freezer.

This looks so good, and love the combination of flavors and textures. I make a similar "Just Egg" alternative, as well (have loved and cooked with mung/moong dal ever since living and working in Cambodia--we were there 7 years-- in the not-too-distant past). Thanks for another great meal idea.
