Buddha bowl.

Made a Buddha bowl for lunch with brown rice, green beans, sauerkraut, roasted mushrooms, broccoli, onion and eggplant as well as roasted kabocha squash. Everything was great except the squash. It was terribly dry. Ugh! I think I may have over cooked them (30 minutes at 430 F - too hot?). The dressing is my usual tahini/cilantro/line with spices.

I'm only successful with spaghetti squash, I usually roast it at 375 maybe try that? The bowl looks gorgeous though!
