Rice cooker meal and Apple fritter bread.

Tried out a lazy meal in the rice cooker today. It has tofu, ginger, garlic, onions, sesame oil, vegetarian oyster sauce, and mushroom soy sauce.

Bun cha again!

 I could eat this everyday. It’s so fresh and piquant!

 So fresh! I just love making this. The dressing is incredible and the crispy spring rolls are a delicious addition.

Veggie sandwich

 My lunch. Air fried Mexican squash, red bell peppers and onions brushed with olive oil, lemon juice and garlic served on toasted sourdough with pesto mayo, and arugula salad tossed with lemon, salt and pepper. I also added Shatta (hot sauce) after I took pics. This was delicious. #vegan #sandwich #veggiesandwich

Berry matcha latte

 So good! I can't wait to make this again! I just purchased a new bag of Matcha because the tin I have is not as fresh. 

 

Bun Cha

 Was craving Bun Cha so I did my best to make it happen! It has rice noodles (I didn’t use vermicelli), air fryer tofu and eggplant, fresh veggies and the mouthwatering sauce which has lime juice, soy sauce, garlic, sugar and Thai chilies. I only used two tiny ones but it was still too spicy! Still delicious. 😋

Eggplant Shakshuka

 This eggplant shakshuka is delicious! I got the recipe online at @foodandwine and the smoked paprika in it makes it so smoky and flavorful. I mashed the heck out of it to make the texture more velvety. I served on toasted sourdough and topped with @theiranianvegan tofu feta (the best), homemade Yemeni Zhoug and fresh cilantro. 😋 #shakshuka #eggplant #tofufeta #zhoug #vegan

 I got this recipe from the Internet, probably 20 years ago and I don’t know where the original post was. It’s very quick to make and comes out very moist.
