Eggplant Dip and Pasta

 Made Zoya Biglary’s eggplant dip today which was delicious. For dinner I made a quick pasta sauce made with olive oil, crushed garlic, chili flakes, a chopped Roma tomato, a couple scoops of the eggplant dip, a tiny bit of pasta water and parsley. Tossed with hot @pastagarofalo spaghetti I got at Costco. It’s really good pasta. Bonus: homemade limeade!

Bought an eggplant today so I can make this. FYI: Male eggplants have fewer seeds/less bitter. You identify them with a small round spot instead of an oblong-ish larger spot on the end opposite the stem end.
