Some eats.

I've had precious little time to prepare meals so Mr. Mouse has been so helpful with my meals and also with the babe. Here is a delicious Gardein fish fillet sandwich with tartar sauce made with mayo and relish.

These are amazing pizzas with Gardein meatballs and Trader Joe's mozzarella. I had a packet of ready made dough in the fridge but it had gone bad so I used pita bread and sandwich loaf. Turned out great!

Recent pic of Hank Bowie, now 2 weeks old. How is it that newborn babies change so much everyday? Blows my mind. Enjoying every little moment!

Welcome Baby Mouse!

Just wanted to pop in to let you all know that my baby was born on February 11th at 9:38pm via c-section. I labored for 17 hrs and tried everything I could to deliver him the normal way. Baby was too big and wouldn't come out! So after a quick surgery, I was overwhelmed by the beautiful sound of my baby's cries and the exclamation of the Doctor and nurses  saying "He's a big baby!!!" I cried and cried and when they brought him over to us and placed him into my husband's arms, I was smitten. 

It was an amazing experience and an emotional one. It'll be one week tomorrow that we've had him and we are so very thankful. I cry every time I tell my birth story or even think about it. I am so glad we are all happy and healthy.

Tofu and mushroom cheesesteak sandwich.

God dang this was gooood! You should try it. Pan fry firm tofu slices seasoned with soy sauce and black pepper. Set aside. Sauté sliced red onion and green peppers in olive oil until tender and onions are caramelized. Season with salt and pepper. Set aside. Sauté sliced mushrooms in olive oil, soy sauce and black pepper. Mix mushrooms with onion and peppers.
To assemble sandwich, cut up tofu into strips and fry in a hot pan until browned and then add some mushroom/onion/peppers. Heat through, and then place a slice of Daiya cheese on top then cover pan to melt the cheese. Slather some mayo on a French roll and transfer the melty mixture into your roll. Close up the sandwich and eat while it's still hot and gooey!

Native Foods lunch and vegan burrito.

Went to Native Foods on Wednesday with my folks. We had a massive lunch.

I had my fave BBQ chopped salad. I love big salads.

Dad had the Bangkok Curry Bowl. He liked it.

Mom had the Native Chopped Salad. She drowned it in mango line dressing. She loved it.

We all shared the chili cheese fries which are so delicious. The cashew cheese is tasty. We also had two cupcakes, chocolate ganache and carrot cream cheese. Yummmm.

Here's a burrito I made for dinner last night. It's filled with refried beans, veggie ground crumbles, lettuce, guacamole, sour cream and taco sauce.

Cookie Time!


My dear friend Cam came over today to bake cookies and spend time together. I'm officially on maternity leave yay!

She made Anzac biscuits which are a delicious combination of oats, sugar, butter (earth balance) and coconut! She used 1/2 palm sugar, 1/2 regular sugar in this recipe.



My cookie contribution was a yummy double chocolate chunk cookie. Never made these before and I was pleased they turned out great. I added 1 tsp each of espresso powder and coffee flavoring to deepen the chocolate flavor.

First batch with a medium cookie scoop made large cookies.
