Cake Making and Veg News Mac n Cheez

Made a German chocolate cake for my husband's birthday.

The recipe is from Susan's fat free vegan blog. The coconut pecan frosting is delicious!


Cheez sauce from Veg News which is cashew, potato and carrot based.

I added peas. This was seriously creamy!

My lunch with a side of stuffing and gravy.

Sunday breakfast, lunch, and dinner.

Van's gluten free waffles, tofu scramble and hash brown.

Quesadilla with daiya cheese, Tofurky meat and sundried tomatoes.

Quick Moroccan stew in couscous. Used a container of ready made lentil soup as the base and added potatoes, carrots, apricots, chickpeas and spices. So good!

Atmosphere Cafe, Venice Grind and Brownies.

Took a nice walk to have lunch at a neighborhood cafe that opened up not long ago.

I had the Forager sandwich which had kale salad, avocado, sprouts, pickled onion and roasted grapes on delicious multigrain bread.

Husband had a French classic, Croque Monsieur and we shared fries.

Afterwards we walked a block to Venice Grind. I had a decaf soy latte. The brew tasted molasses-y. I wonder if it was a holiday flavored espresso. It was good.

Came home and made a batch of Duncan Hines brownies. Here they are cooling.

Lunch and Dinner.

I experimented with sandwich filling ideas and came up with this tasty sandwich. Roasted red pepper hummus, thinly sliced carrot, jalapeƱo havarti Daiya cheese and lettuce. And mayo too!

For dinner I gave into pregnancy cravings for comforting foods. I cooked up some Gardein chick'n nuggets (they come as Mandarin orange chick'n but I just omitted the sauce). Then I tossed them with BBQ sauce and served with mash and peas. Yum!

This eyeshadow I got on Amazon for $6.99 from the company Honeybee Gardens. The color is Passage to India which is a rich copper red brown. That's a lot of product for that price! (How can people pay $16 for a tiny pan of MAC eyeshadow?)

Four Alarm Chili & Sushi Rolls

I made the Four Alarm Chili from 1,000 Vegan Recipes. So delicious! I added some crumbled Trader Joes veggie meatballs to make it meatier. Served with buttered (earth balance) corn tortillas.

TGIF!

Got out of work early today and when I got home, I made a pot of illy decaf. My fave way to prepare is to heat about 1/4 cup vanilla soymilk in a mug, pour in the brewed coffee to the top and stir in a tsp of agave. It's delicious! I've been drinking mainly decaf as I'm not allowed too much caffeine because of the baby. Illy decaf and Peet's decaf Major Dickison are my favorites.

The other night I had this delicious Gardein beefless burger with Follow Your Heart cheese for dinner. With all the fixin's.

Favorite fruit to eat during pregnancy. It's sweet and refreshing and hydrating! Also curbs sweet and snack cravings. I've only gained 7 lbs in 6 months and my doc is happy with that.

Duncan Hines brownies veganized.

Yum. Needed these last night badly. To make them vegan get a box of this:


Pour mix into a bowl and stir in 1/2 tsp baking powder, 1/4 cup water, 1/2 cup oil and 3 TB ground flax seeds mixed with 6 TB warm water. Stir until lumps are gone and pour into a square baking tin. Bake at 350 F for about 30 minutes until toothpick comes out clean. Cool then cut into squares.
