Healthy applesauce banana oat muffins


Really soft and tender and not too sweet.  Modified recipe from Snacks with Jax on IG.


Preheat oven 375F

In a big bowl, mash 2 ripe bananas, add a fruit cocktail cup, puréed(about 4 oz.), add a scant 1/2 cup coconut sugar, 6oz. applesauce, 4 Tb melted coconut oil, 1 cup quick oats, 3/4 c whole wheat flour, 1 tsp baking powder, 1/2 tsp baking soda, 1 tsp cinnamon, 1/4 tsp salt. Mix until combined. Pour batter into muffin tins and bake for about 20 min or until toothpick inserted comes out clean.

*fruit cocktail was 100% fruit in fruit juice. We get the big packs at Costco.
