Veggie lasagna.

I totally forgot to photograph the beautiful pan of veggie lasagna I made! But here are pics of what's left. My 15 month old had two big bowls today.





The filling is a tofu ricotta with onion, red peppers, zucchini, mushrooms and spinach. Can't wait to eat more tomorrow. It was so delicious!

  1. I would eat two portions too! Leftover lasagna might even be better- cold standing in front of the fridge late at night ;)
