Delicious muffins that I made yesterday and today. I finally cracked open my brand new copy of 'Vegan Brunch' and made the "Bakery Style Berry Muffins". I used strawberries in mine. I also made fluffy banana-cinnamon muffins from a recipe I adapted at vegetarian times. Find the recipe

And a simple Thai red curry with potato, carrot, eggplant, mushroom, zucchini, tofu and onions. Mmm.
Yum! those berry muffs are so good, and I've always wanted to make those chimp cakes! Did you just leave out all the add-ins?

ReplyDeleteYes I omitted both the walnuts and choc. chips. Too many obstructions! :) One day I will make the recipe as written because they bake up so beautifully.
Hmmm. Maybe I should switch from making Vcon Banana Bread to these for the school coffee shop...

ReplyDeleteThe Maesri pastes I buy (green, red, panang, karee) do not contain animal products. There are other Maesri flavors that do have shrimp paste such as the Prik Khing, Chu Chee and Sour Curry. They are all very clear on the labels.
Okay, you are inspiring me to get my muffin tins out and start the ol' baking :-) Also, I'm a You Are What You Eat fan also, watch the show, follow some of the recipies but I'm confused about where here detox plan is documented. She has several books out and I see you own the cookbook, is the cookbook the best one to buy?

ReplyDeleteI have both "You are what you eat cookbook" and "Slim for life". I recommend the cookbook to get ideas for a detox plan. When I did the detox for 3 weeks, I based my meals off the cookbook but not all of them. As long as I was cooking with whole foods and no sugar, salt, white flour/pasta/rice, I was ok.
I currently subscribe to Vegetarian Times which I love.

ReplyDeleteNow that I think about it "Slim for life" is a day by day detox plan which is probably what you're looking for. I don't think I could ever follow her plan to the letter because of all the groceries I'd have to buy! I bought that particular book for the recipes, not so much for the "plan".
oh ok..good to know.It's just that I read a post by Susan on fatfreevegan that the Maesri brand says no shrimp on the can itself but says otherwise on their website..

and they don't have any nutritional info anywhere on their site. I guess we can email them to make sure. Hopefully they are not fooling us... I go to Thai markets often (my family is Thai) and we buy these all the time and some contain shrimp and fish (which my mom uses), and some don't. I always make sure the ones I buy don't as well as make sure the cholesterol amount is 0mg. :)
