Creamy Tomato Blender Sauce with Angel Hair Pasta & Cookbook Giveaway!



This is the second time making this sauce from a lovely little book called "Pasta & Vegetables". You can see the first post here. It's a vegetarian recipe that uses dairy but I was easily able to veganize this by using plain soymilk for the cow's milk and vegan parmesan for the parmesan cheese. It was delicious on top of delicate angel hair. I can see myself adding mushrooms next time or even veggie sausage!

    My favourite pasta and veggie combo is edamame, carrots and red pepper on brown rice pasta with a orange sesame sauce. Pretty and tasty!

  5. That all sounds so yummy. My favorite is the old classic, penne with broccoli, garlic, lemon juice and olive oil. Maybe some chili flakes on top. An oldie but a goodie!

    It sounds boring, but my fave pasta veggie combo is whole grain spaghetti tossed with fresh grilled veggies, olive oil, and herbs. Simple but so good!

  7. Awesome giveaway indeed! I love all things pasta so it's difficult to choose one pasta/veg combo is tough. I would have to say that always love a fettucini pasta with a ton of pesto and fresh tomatoes - it always hits the spot!

  8. My favorite has got to be fusilli tossed with olive oil, brocolli, sundried tomatoes, chopped walnuts, chilli flakes, and any herbs I have on hand. So simple, but delicious!

  10. My favorite pasta dish is one from a bread book, "No Need to Knead". It's so simple, but so good. It's simply fresh pasta topped with chopped tomatoes, garlic, basil, and splash of olive oil. Top with the ubiquitous Parmesan (vegan of course)and the secret ingredient: freshly browned bread crumbs. This is served at room temp. Even my pasta-hating hubby goes for this. However, don't try this unless you can get garden-grown tomatoes...it's just not the same.

  11. HMMMM....Well I've never tried it but right now my favorite vegitable is zuccini! What about zuccini and flat noodles with garlic and a buttery sauce!

  12. my favorite is an eggplant creole recipe i found in an old diabetic cookbook. it was meant as a side dish, but stirred into rotini? heaven.

    I go the Asian root more often than not when it comes to pasta/noodles. I love either Vermicelli or Udon with peanut sauce and lots of veggies. I also love Udon in a clear broth soup, or rice noodles pad thai style!

    When it comes to Italian pasta...it's a toss up between V'Con's Penne Vodka and the infamous VegNews Mac & Cheese. Yummmmmmmmm.

  17. Hands down, my favorite is pasta and broccoli. I used to eat this growing up and it's still a favorite of mine. Pasta with broccoli, lots of garlic, olive oil, and crushed red pepper. Yum!

  18. I like to roast romanesco with garlic, shallot, black pepper and extra virgin olive oil. Then I toss it with whatever short pasta I have on hand, along with sun dried tomato and kalamata olives.

  19. My favorite pasta combo is definitely broccoli, sundried tomatoes, and pine nuts. A little olive oil, garlic, ahhhh....perfection!

  20. Thanks for this giveaway! I've always been a pasta fiend. Lately my favorite combo involves sautéing garlic, shiitake mushrooms, and an Italian herb blend in olive oil, then adding torn-up kale, sprinkling with a little white wine and lemon juice, then covering to wilt the kale a bit. Toss that over some spaghetti and sauce, and I'm a happy camper! :)
