Made Zoya Biglary’s eggplant dip today which was delicious. For dinner I made a quick pasta sauce made with olive oil, crushed garlic, chili flakes, a chopped Roma tomato, a couple scoops of the eggplant dip, a tiny bit of pasta water and parsley. Tossed with hot @pastagarofalo spaghetti I got at Costco. It’s really good pasta. Bonus: homemade limeade!

Beyond meat chili w/ gochujang

Sopa Campesina/Moro beans and Bloody Maria
Sopa Campesina from @rancho_gordo Bean Book. It is basically the beans in this case Moro beans from Puebla, Mexico with their broth topped with chopped onion, cilantro, lime juice, salsa, and fried tortilla strips. Delicious!!!!

Sheet pan Kefta
I think this was a knockout recipe. Kefta kebab with sumac onions, cornichon and roasted tomatoes serve in a pita wrap. Garlic harissa tahini yogurt sauce. I riffed on @cheffinwithzach recipe for sheet pan kefta using @beyondmeat to make it vegan. I added vegan coconut yogurt to the harissa tahini sauce. Egyptian Koshary
