Banana muffins

I used a banana cake recipe and cut the sugar to 1/2 cup and added 1tb blackstrap molasses. Worked out fine!
 
Revised recipe 

1 3/4 cups flour
1/2 cup sugar 
2 tsp baking powder
1/4 tsp salt
3/4 cup soymilk 
1/2 cup oil
1 tsp vanilla 
1 TB blackstrap molasses 
2 ripe mashed bananas 

Mix all ingredients together and spoon into paper muffin liners. Bake 350f for about 30 minutes.

My old standby: quinoa black bean enchilada casserole!

Haven't made this in a long time because the price of quinoa went up a few years ago. It came down a bit so I bought some to make this. Insides: quinoa, black beans. Soyrizo, peppers and spinach and Follow Your Heart mozzarella.

How to make Thai papaya salad!

Thai papaya salad is spicy, piquant, refreshing and crunchy. I watched my mom make this today and snapped some pics and took notes!

Thai papaya salad

1/4 of a Thai green papaya, unripe- peeled and shredded. 
1-2 red Thai chills or you can use jalapeño 
1 tiny clove garlic
2 small tomatoes
1 tsp salt
1/4 of a lime sliced with peel on
1/2 tsp sugar
1 TB mushroom soy sauce

1. Crush chilies and garlic in a mortar with a pestle. Pound them until they are broken down.
2. Add papaya and tomatoes. Then salt, lime, sugar and mushroom soy sauce.
3. Start pounding all ingredients with a pestle to incorporate and use a spoon to help move ingredients around. Add 2 TB water and mix some more.

Tofu and hot dog scramble.

Sounds weird huh? When I was young my mom used to make us Thai egg omelet to eat with rice. Sometimes we'd have fried sausage or kielbasa too. I was craving that today so I made this.

It is basically scrambled tofu with veggie dogs. But it's the way I seasoned it that made it really good. 

Recipe:
1/2 onion diced 
1 or 2 veggie dogs (I used 1 jumbo smart dog) sliced 
Soy sauce or Golden Mountain sauce
Garlic powder
Black pepper
1/2 block firm tofu
Turmeric for color
Black salt or Vegg powder
3 scallions sliced thinly

In a pan, sauté onion in olive oil over medium high heat until tender. Add chopped hot dogs, a few drops of soysauce for flavor and a few pinches of garlic powder and black pepper. Sauté until fairly browned.
Drain tofu and add to pan by breaking it up with fingers. Add a few pinches of turmeric, black salt or Vegg powder and a few more drops of soy sauce. Keep stir frying until tofu is nice and browned. Add scallions and cook for another minute or so. Serve with rice and soy sauce on the side.

Apocalyptic Beauty 4th of July Sale.

New snacks.

The crackers are delicious! There are also chickpea ones that are vegan. The hummus is new to me. It is made out of white bean and edamame. The cucumber flavor is so good!

It has a refreshing dill flavor.

I also got the plain with pine nuts.

Henri today. I'm home today because I lost my job a few days ago. I'm devastated but trying not to dwell on it too much. My life has been so chaotic since the birth, recovering from the c section, dealing with the emotional and physical challenges of being a new parent (haven't really slept for 4 months!), trying to find time for self care, etc. I was starting to slowly getting back on track the past two months. But now that this has happened, I'm off track again which really bums me out. Hope things will turn around for me. At least I get to see my little prince everyday now until I figure out what to do next.
